***Chicken Tetrazzini***
Coarse salt and ground pepper
6 tablespoons butter
1 pound white mushrooms, trimmed and sliced inch thick
1/2 cup all-purpose flour
3 cups milk
1 can (14!.5 ounces) reduced-sodium chicken broth
3/4 cup dry white wine
3 cups grated Parmesan cheese
1/2 teaspoon dried thyme leaves
1 pound linguine, broken in half
1 rotisserie chicken, skin removed, meat shredded (about 4 cups)
1 package (10 ounces) frozen peas, thawed and drained
Directions
Preheat oven to 400!. Bring a large pot of salted water to a boil (for pasta)!. In a large saucepan, melt 2 tablespoons butter over high heat!. Add mushrooms, and season with salt and pepper!. Cook, tossing frequently, until tender and browned, 8 to 10 minutes!. Transfer to a bowl, and set aside!.
Make sauce: In same saucepan, melt remaining 4 tablespoons butter over medium heat!. Add flour; cook, whisking, about 1 minute!. Whisking constantly, gradually add milk, broth, and wine!. Bring to a boil; reduce to a simmer, and add 2 cups Parmesan and thyme!. Season with salt and pepper!.
Cook pasta 2 minutes less than package instructions for al dente; drain and return to pot!. Add sauce, chicken, peas, and mushrooms!. Toss well to combine!. Divide between two shallow 2-quart baking dishes; sprinkle with remaining Parmesan!. Freeze (see below) or bake until browned, about 30 minutes!. Let stand 10 minutes before serving!.
To freeze: After placing pasta mixture in baking dishes and sprinkling with Parmesan (step 3), cool to room temperature!. Cover tightly with aluminum foil, and freeze up to 3 months!.
To bake from frozen: Bake, covered with foil, at 400 degrees, until center is warm, about 2 hours!. Uncover, and bake until top is browned, about 20 minutes more!. Serve!.

2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed of excess moisture

2 cups ricotta cheese
1 garlic clove, minced

Shrimp Linguine With Homemade Red Pesto
I suggest buying frozen, pre-shelled shrimps,
1 lb Raw Shrimps, no shells or tails
3/4 lb linguine, cooked
1 cup sun-dried tomatoes, in oil
1/2 red bell pepper
3/4 cup canola oil
1/4 cup Olive oil, cold-pressed
1/4 cup fresh parmesan, grated
1/4 cup pine nuts, roasted
Pesto preparation: In a small blender or mixer, puree the sun-dried tomatoes, red bell pepper, oil, grated parmesan and pine nuts!.
Pour about 2/3 of the pesto in a pan; heat on medium heat and add shrimps!. As soon as the shrimp change color, remove from heat and add pasta; stir well!. Add a little cooking water from the pasta, mix and serve!.
Add Red Pesto to taste on individual plates!.
Voila! A very simple dish to make and serve, and that is sure to please every palate!

1 CUP GREEN ONIONS (CHOPPED)
1 CUP GRATED SWISS CHEESE
6 OZ!. GRATED PARMESAN CHEESE
After cheeses have melted
ADD: 16 OZ!. IMITATION CRAB (I used 24 oz)
POUR OVER: 12 OZ!. COOKED LINGUINE NOODLES
NOTE: There's just a little milk left in the can!. After I drain the noodles, I pour the remaining milk over the noodles and stir, before I add the sauce!. It thickens up considerably after setting a while!.
Side Dish:
Sweet pasta salad
1 pound rotini pasta
4 carrots, shredded
1 green bell pepper, chopped
1 onion, diced
1 cup distilled white vinegar
1 cup white sugar
1 (14 ounce) can sweetened condensed milk
2 cups mayonnaise
1 teaspoon salt
1/2 teaspoon ground black pepper
DIRECTIONS
Bring a large pot of lightly salted water to a boil!. Add pasta and cook for 8 to 10 minutes or until al dente; drain!.
In large bowl, combine pasta, carrot, green pepper and onion!. In medium bowl, combine vinegar, sugar, condensed milk, mayonnaise, salt and pepper!. Toss salad with dressing and chill 4 hours in refrigerator before serving!.

* Add a pot of double cream
* Pinch paprika, salt, pepper
* Pinch of Cayenne pepper for some heat
* Add a good sprinkle of dried or fresh dill

Easy Beef Stroganoff!.I got this recipe off allrecipes !.com about 5 yrs ago!.!.it's one of our favs!.I usually serve it with a salad and some sort of bread!.
