Here is the recipe I use:

1/3 cup uncooked long grain rice
2 tablespoons finely chopped onion
2 tablespoons slivered almonds
3 tablespoons butter, divided
3/4 cup water
1 teaspoon chicken bouillon granules
1 teaspoon lemon juice
1/2 teaspoon salt, divided
1 (4 ounce) can mushroom stems and pieces, drained and chopped
2 Cornish game hens
1/8 teaspoon pepper

DIRECTIONS
In a saucepan, cook and stir the rice, onion and almonds in 2 tablespoons butter over medium heat for 5 minutes or until rice is lightly browned!. Stir in the water, bouillon, lemon juice and 1/4 teaspoon salt!. Bring to a boil!. Reduce heat; cover and simmer for 16-20 minutes or until rice is tender!. Stir in mushrooms!.
Sprinkle outside and cavity of hens with pepper and remaining salt!. Stuff hens with rice mixture!. Place on a rack in a shallow roasting pan coated with nonstick cooking spray!. Melt remaining butter; brush half over hens!.
Cover and bake at 400 degrees F for 25-35 minutes longer or until juices run clear and a meat thermometer reads 180 degrees F for hens and 165 degrees F for stuffing!.

Ancho-rubbed Game Hen Recipe
Ingredients:
6 ancho chilies -- dried
8 cups boiling water
2 tablespoons garlic -- minced
1/2 teaspoon salt
2 tablespoons cilantro -- minced
2 cups cornmeal
2 tablespoons curry powder
2 tablespoons cumin -- ground
salt and pepper
2 Rock Cornish game hens breast -- skinned and boned
1 cup olive oil

Directions:

Preheat the oven to 400F!. Place the ancho chilies in a large bowl, cover them with the boiling water, and soak them for 30 minutes to overnight!. Drain the chilies well, then remove and discard the seed and stems!. Place the chilies in a blender with the garlic, salt, and cilantro!. Puree and set aside!.

Combine the cornmeal, curry powder, cumin, salt, and pepper and spread in a jelly-roll pan!. Spread the hen breasts generously and evenly with the chili puree, then dredge them in the seasoned cornmeal!.

Place a large saute pan or skillet over high heat,!. add the oil and heat until it begins to smoke!. Add the hen breasts and cook 2 to 3 minutes, or until the topping is crisp!. Turn the breasts, cook the other side until crisp, then transfer the breasts to the preheated oven to cook another 5 minutes, or until opaque throughout!.

NOTES : Chicken Breasts may be used!. Bake the chicken breasts an addition 10 minutes!.

Cornish Game Hens Recipe
Ingredients:
4 Cornish game hens
8 ounces stuffing mix
1 cup chicken stock
1 large orange -- cut up
1/4 cup fresh orange juice
2 tablespoons honey
1 1/2 teaspoon vegetable oil
1 tablespoon fresh lemon juice
1/4 teaspoon grated orange peel

Directions:

Rinse hens; sprinkle inside and out with salt and pepper!. Prepare stuffing mix according to package directions!. Spoon into hens and truss!. Place neck ends down in crock pot!. Combine remaining ingredients!.

Baste hens with some of the sauce and pour remainder in pot!. Cover and cook on low for 5 to 7 hours!. Baste hens once or twice during cooking!. Spoon sauce over hens at serving time!.

Cornish Hens with Rice Dressing --

THIS IS a perfect main dish when you're cooking for two!. I've even used these hens as a stand-in for turkey on Thanksgiving Day when the group was not large!. I found this recipe among my mother's collection!. She was always searching newspapers and magazines for new cooking ideas!.




INGREDIENTS
1 1/3 cups chicken broth
1/2 cup uncooked long grain rice
1/2 cup sliced fresh mushrooms
1/4 cup chopped celery
2 tablespoons chopped onion
1/2 teaspoon dried marjoram, divided
1/2 teaspoon salt, divided
2 (1 1/4 pound) Cornish hens
1 tablespoon vegetable oil
pepper to taste



DIRECTIONS
In an ungreased 9-in!. square baking dish, combine broth, rice, mushrooms, celery, onion, 1/4 teaspoon marjoram and 1/4 teaspoon salt!. Place hens on rice mixture and brush with oil!. Sprinkle with pepper and remaining marjoram and salt!. Cover and bake at 350 degrees F for 1 hour!. Uncover and bake 25-35 minutes longer or until juices run clear!.
