Mushrooms can be substituted for meat because of their strong, wonderful flavor!. You could saute onions and mushrooms together and serve over toasted sourdough bread slices!. You could make little onion and mushroom pies!. Use a giant portabello mushroom for a "hamburger" filling!. Make mushroom tacos!. You could fill mushroom caps with cracker crumbs, garlic minced, onions fried, parsley minced etc!. You could also fill hollowed out tomatoes with the same stuff!. Add celery!. Any kind of veggies cut up and stir fried with these things!. Add brown rice or eggs for protein!. Better yet: CHEESE!Www@FoodAQ@Com

ONION RINGS
Flour seasoned with seasoning salt and pepper
2 eggs, beaten
1 onion, sliced into rings of desired thickness
Coat rings in flour, then in egg wash and then toss in seasoned flour again!. Bring oil in fryer to 350 degrees and cook onion rings in small batches until golden brown!. Sprinkle with salt and serve!.
DELI STYLE POTATO SALAD
8-10 large potatoes
half of a medium onion, diced
2 tbsp!. sweet pickle relish (or dill relish)
1/4 cup celery, sliced thin
1 1/2 cups miracle whip
2 tbsp!. prepared mustard
1/2 tsp!. celery seed
sugar, salt and pepper to taste
Peel potatoes and place in a large pot of boiling water!. Cook until tender, drain and refrigerate until chilled!. Chop coarsely!. In large bowl combine miracle whip, mustard, celery seed, sugar, salt and pepper!. Reserve 1/4 cup of dressing!. Add onion and potatoes to dressing!. Mix well and refrigerate overnight!. If salad is too dry, add 2 tbsp!. of water to reserved dressing and mix into salad to loosen!. Add salt and pepper to taste!.
EGG SALAD
6 eggs
3/4 cup-1 cup mayonnaise or miracle whip
1 tbsp!. sweet pickle relish
1/4 onion, minced
2 tsp!. prepared yellow mustard
1 stalk celery sliced very thin
Salt and pepper to taste
Bring saucepan of water to boil!. Boil eggs 8-10 minutes, remove from heat and allow to cool 5 minutes!.Remove from hot water and peel under running water, making sure to remove all of the shell!. In bowl, mash the eggs, add onion, relish and celery!. Mix in mustard and mayonnaise!. Place in fridge for 1-2 hours to allow flavors to mingle!. Add salt and pepper to taste before using!.

4 stalks celery sliced

6 cups milk
Salt and pepper to taste
In large pot, combine potatoes, onion and celery!. Cover with water and simmer 1 hour or until veggies are tender!. Add milk and heat through (do not boil!)!. Salt and pepper to taste!.

Cheese-Filled Mushrooms
1 1/2 pounds white mushrooms
1 cup shredded Cheddar cheese
1 cup shredded mozzarella cheese
1 cup shredded Parmesan cheese
3/4 cup mayonnaise
Crumbled cooked bacon, to taste (optional)
Preheat oven to 375 degrees F!. Lightly grease a large cookie sheet; set aside!. (If desired, line cookie sheet with aluminum foil to save on cleanup!.) Wash mushrooms thoroughly; dry and remove stems, hollowing out a hole where the stem was attached to the mushroom!. Set aside!. Mix together cheeses, mayonnaise and bacon (if using)!. Pack the center of each mushroom with a mound of the cheese mixture!. Arrange mushrooms on cookie sheet!. Bake until cheese is browned and mushrooms are shiny, about 20 minutes!. Mushrooms may be stuffed and refrigerated ahead of time, then baked as needed!.

1 package crescent rolls
1 cup sour cream
One half cup mayonnaise
1 package dry Hidden Valley Ranch dip mix
1 cup cheddar cheese, shredded
One half cup fresh broccoli, chopped
One half cup green onions, chopped
One half cup carrots, shredded
One half cup zucchini, grated
One half cup mushrooms, sliced
1 8-oz!. can sliced water chestnuts, drained and chopped
Spread out crescent rolls on a baking sheet to form a crust and bake for 10-15 minutes at 350 degrees until lightly browned!. Remove from oven and allow to cool!. Combine sour cream, mayonnaise and dry dip mix and spread over crust!. Place vegetables over dressing and top with shredded cheese!. Refrigerate until ready to serve!. Cut into squares before serving!.
Broccoli-Mushroom Casserole
2 - 10oz!. pkgs!. frozen, chopped broccoli
1 lb!. fresh mushrooms, sliced
2 T!. butter, melted
White Sauce (recipe below)
1-1/2 cups shredded Cheddar cheese
Paprika
Cook broccoli in small amount of boiling, salted water just
until tender; drain and set aside!. Saute mushrooms in butter
until tender; drain!. Combine White Sauce, cheese and
mushrooms!. Place broccoli in greased shallow 2 qt!. casserole!.
Spoon White Sauce over broccoli!. Sprinkle with paprika, bake at
325° for 20 minutes!.
White Sauce:
1/4 cup butter
1/4 cup flour
2 cups milk
1/2 t!. salt
1/4 t!. pepper
Melt butter in heavy saucepan over low heat; add flour, stirring
until smooth!. Cook 1 minute, stirring constantly!. Gradually
add milk; cook over low heat, stirring constantly, until
thickend and bubbly!. Stir in salt and pepper!. Makes about 2
cups!.

1/2 tsp!. salt
1 1/2 tsp!. baking powder
Mix together:

1/4 c!. vegetable oil
Beat until smooth with flour mixture!.
Fry onions at 375 degrees until golden brown!. Grease should be only 1 inch deep in pan, just enough to float food!.
When grease is hot, 375 degrees, dip dry onions into fritter batter and let excess drip off!. Fry until golden brown!. Remove and place on a plate that is piled with paper towel to soak up excess grease!.
