Cauliflower cheese - help please!?!


Question: Cauliflower cheese - help please!!?
I want to make cauliflower cheese as part of a meal tonight!. If I blend butter, cheese and milk will this make a good enough sauce!?

I have no flour or cheese sauce packet mix, before people tell me to use them, and have no way of getting hold of any today!

If you are mixing it together all in one bowl and the cheese is a processed cheese such as velveeta or sandwich slices, I wouldn't add milk or butter!. Just drain the cauliflower really well and let it melt over top, then stir together!.

If you are using a block cheese such as cheddar, then I would grate the cheese into a bowl and heat some to simmering!. Forget about the butter - the cheese has enough oil of it's own!. Gradually add the milk to the cheese, stirring until it is the consistency you want it!.

Here is an experimental tip- if you have a potato, grate the potato into a saucepan and add the milk!. Bring to a simmer and then strain the potato from the milk!. Perhaps you could extract enough potato starch to help as a thickening agent!. One other tip, you probably don't have any but cornstarch is a substitute thickener for flour!.

it's a shame you have no flour, because all you need to make a sauce is flour milk/water and some cheese

you could probably knock one together from a lot of butter and cheese though that might result in something more than a bit stodgy, fatty and unhealthy!. It could also work out a bit expensive because you'll use masses of cheese

if you have any cornflour, or other thickener!.!.that will work instead of flour too

two options I'd consider if you have none of those things

number one!.!.!.potato!. Most people have a potato knocking around in their kitchen!.

you can thicken a sauce using creamed potato, you can either do this by boiling a potato, mashing it and adding milk, then whisk it until it is the same sort of consitancy as a sauce!.!.!.or!.!.!.you can use instant mash potato flakes or granules which is easier!.

use this mixture in the same way you would flour to thicken the butter and cheese mixture!. it should result in a nice thick sauce!.

second forget the sauce, boil the cauli until it's very tender!. grate the cheese and slice an onion if you have one!. put the cauli in a dish and sprinkle the rest on the top!. Add any herbs you may happen to have, some black pepper is also good

stick it in the oven and you will have a lovely cheesy herby cauliflower bake with nice roasted onion!. A great side dish or a main one if you serve it with some bread, rice or pastaWww@FoodAQ@Com

This is a white cheese sauce, but you could easily modify by using a different cheese and leaving out the chilies!.

White Cheese Sauce
1 cup butter
3 cups shredded Monterey Jack cheese
1 cup sour cream
2 (4 ounce) cans diced green chilies, drained

1!. Melt butter in a saucepan over medium heat!. Reduce heat to medium-low, and stir in shredded cheese until melted!. Mix in sour cream and green chilies, and cook, stirring occasionally just until heated through!. Do not allow to boil!.

BAKED CAULIFLOWER AND CHEESE

1 pkg!. frozen cauliflower
3 eggs
1/2 c!. milk
4 tbsp!. grated cheese (Cheddar or Romano)
1 tsp!. prepared mustard
1 tsp!. salt
Pinch cayenne pepper

Arrange cauliflower in baking dish!. Scald milk (or use 1/4 cup evaporated milk and 1/4 cup water)!. Combine milk with all remaining ingredients, mix well and pour over cauliflower!. Preheat oven to 350 degrees and bake 35 minutes!. 6 servings!.

What you ve got wont work check the cupboard for a bit of corn flower and you might get away with it

If you grate the cheese melt the butter in the milk and reduce it slowly you might be able to make an effort it will depend on the amount and type of cheese

Not really, it'll be a kind of runny lumpy mix!. Why not steam the cauli and then put it in a serving dish and top with teeny blobs of butter then cover with grated cheese and some black pepper, pop it under the grill to melt!. Not quite like the 'proper' cauliflower cheese but I imagine it'll be quite nice!. Www@FoodAQ@Com

hugs xxx, yes great, some also melt butter and mix a little flower, mix it well till there are no lumps, add a cup of milk slowly always stirring, add your shredded cheese ( i use the pre-shredded three cheeses from Kraft or Tri Stelli) if it starts going to thick just add more milk till it is the consistency you feel comfortable with!.Whisk at a medium heat well!.

You can't make a cheese sauce without flour!. I would put my cooked cauliflower in a shallow casserole or pie plate, top it with grated cheese, and put it in the broiler for a minute(or just until the cheese melts)!. Anything and everything tastes better with cheese on it :)Www@FoodAQ@Com

if you have some corn starch that will work to thicken it up!. just make a thin paste like you would with flour!. what you have will work for a cheese sauce it will just be runny!. the idea with the instant potatoes that will work also to thicken it up!. good luckWww@FoodAQ@Com

No,those three ingredients won`t make a cheese sauce!.!.do you have any potatoes or instant mashed potato!? these could be used to thicken the milk!.!.or some pasta which is well cooked and then pureed along with milk and cheese!.Www@FoodAQ@Com

my mom always put some veleta cheese in a bowl and stuck it in the microwave!.!.!.!.!.i do belive she added milk to make it a bit more runny!.Www@FoodAQ@Com

I always make cheese sauce with milk and cheese only!?!? I'm not sure why others are saying it won't work!. I use that for broccoli as well and it is very good, however I always use velveeta!Www@FoodAQ@Com

Melt the butter, add a bit of plain flour and make a roux!. Gently add milk over a very low heat, stirring all the time - then add the cheese!.

Alternatively, use cornflour, Blend a tablespoon with a drop of cold milk, add about half a pint of milk, bring to the boil stirring then add cheese!.Www@FoodAQ@Com
