Here's my favorite - kind of meal in one dish:
About 1/2 box of pente pasta (or wide egg noodles or bowtie pasta)
Frozen vegetables (I like to use the stir fry for different veggies)
1 Jar of Alfredo Sauce (Great Value brand is good)
1 can of chunk white chicken
salt & pepper
While the pasta is cooking, put veggies in microwave
They will take approximately the same time to cook (11-13 minutes)
Drain & mix together
Add Alfredo Sauce and canned chicken
Salt & Pepper to taste
I do the whole thing in one big pan!. It is so quick and easy, I just make a point of having these ingredients on hand all the time! Great
when you're in a hurry !. !. !. but hungry!Www@FoodAQ@Com

Recently I've been buying sweet potatoes at the store because I found out they taste even better than regular potatoes, and they have a great flavor!. Cook it like the regular potato (I like to boil it, but you can also use microwave or oven)!. Season like a regular potato, or put some butter and brown sugar in it for a sweet dessert treat!. Could use classic toppings like cheese, sour cream, bacon pieces, and chives!. If you cut the sweet potato into smaller pieces, I bet you could cook it in 15 minutes!. Makes a healthy alternative to french fries
Here's another easy recipe I've been hooked on!.
http://allrecipes!.com/Recipe/Mexican-Ric!.!.!.
Takes a little bit longer than 15 minutes, but it tastes like restaurant quality Mexican rice!. Ingredients were very inexpensive, and the 4 serving size was plenty! You can even adjust the serving size on the recipe page if you want to see the ingredient measurements to make more or less!.
And here's another recipe I REALLY like!.
http://allrecipes!.com/Recipe/Italian-Bre!.!.!.
I give it 5 stars! It takes a little bit more time than 15 minutes, but you'll be craving second and third helpings because it's so yummy!. If your kids like chicken tenders, they will love Italian breaded pork chops!. This one is also very cheap to make!. Make sure you use less egg and bread crumbs than the recipe calls for, or else you will end up with too much leftover egg batter and crumbs!.Www@FoodAQ@Com

Homemade Chicken or Fish Nuggets
This was originally used for fish but I have also used it for chicken nuggets the same way, I just cook them a little longer:
2 or 3 Tilapia filets
1 egg
about 1/2 c milk
about 1/3 c parmesan cheese (grated)
1/2 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
about 1 cup bread crumbs
Preheat over to 400!. Cut the fish (or chicken) up into bite size pieces!. Put the bread crumbs, salt, pepper, and parmesan into a ziploc bag!. Mix the egg and the milk in a good sized bowl and add the fish (or chicken) nuggets to the bowl!.
Take the nuggets out of the milk/egg mixture a few at a time and drop into the bag!. Shake around until well coated and then place on baking sheet (you can grease it but I usually just line with foil)!. Do this until they are all coated and bake about 15-20 minutes depending on the size of your nuggets, slightly longer for chicken!. They are good!

Freezer Ready Cornflake Chicken Fingers
Make several batches of these and store them in freezer bags - you don't need to thaw them to cook them!. The amount of servings varies based on how thinly your cut your chicken strips - usually about 3-4 strips per chicken breast half, and usually 3-4 chicken breast halves come out to one pound!. To make these kid friendly, you may leave out the hot sauce!.
1 cup crushed cornflake cereal (measure after crushing)
1 tablespoon fresh parsley, finely chopped
1/4 teaspoon salt
1 lb boneless skinless chicken breast half
1/3 cup prepared ranch salad dressing, plus more for dipping
2 teaspoons water
1-2 teaspoon hot pepper sauce (such as Louisiana Hot Sauce, to taste) (optional)
Line a cookie sheet that will fit into your freezer with foil and have ready to go!.
Mix together cornflakes, parsley, and salt in a shallow dish!.
Mix together the 1/3 cup dressing, water, and hot pepper sauce to taste in a large mixing bowl!.
Cut each chicken breast into several long strips, trimming any fat!.
Drop the chicken strips into the wet mixture and stir to coat well!.
Roll each chicken strip (one a a time) into the crumbly mixture, coating well!.
Set each coated strip onto the foil lined pan, leaving a little space between each!.
Freeze until firm- approximately 2 hours or so!.
(Once frozen, you can store in a freezer bag for 1 month), then store in airtight freezer containers!.
When ready to serve, preheat oven to 425 degrees F!.
Set frozen chicken fingers in a single layer on a lightly greased foil lined jelly roll pan (or large cookie sheet with sides)- approx 15x10"!.
Bake 18-20 minutes from frozen until no longer pink inside and outside is golden!.
Serve warm with a bowl of dressing for dip!.
