Huge Scary Spiders

2 (1 ounce) squares unsweetened chocolate
1 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup butter
1 cup white sugar
1 egg
1 teaspoon vanilla extract
40 cinnamon red hot candies

Preheat oven to 375 degrees F (190 degrees C)!. Lightly grease baking sheet!.

In a saucepan melt chocolate over low heat!. Let cool!.

In a small bowl mix flour, baking powder and salt!.

In a medium bowl beat margarine on low speed until smooth!. Add sugar and beat until creamy!. Stir in egg, vanilla and chocolate!. Add flour mixture and mix well, forming a stiff dough!.

To make spider, shape a 2 inch flat oval for the body!. Make the spider's head by flattening a circle about 1/2 inch wide!. Shape dough for legs each about 2 inches long and less than 1/4 inch wide!.

Attach the head and legs to body!. Put two red candies into head for eyes!. Bake for 5-8 minutes!. Let spiders cool on baking sheet to avoid breaking when moving!.

Pumpkin Roll

3/4 cup all-purpose flour
1 cup white sugar
1 teaspoon baking soda
2 teaspoons pumpkin pie spice
1 cup pumpkin puree
3 eggs
1 teaspoon lemon juice
2 tablespoons confectioners' sugar

1 (8 ounce) package cream cheese, softened
1/4 cup butter
1 teaspoon vanilla extract
1 cup confectioners' sugar

Preheat oven to 375 degrees F (190 degrees C)!. Grease and flour a 9x13 inch jelly roll pan or cookie sheet!.

In a large bowl, mix together flour, sugar, baking soda, and pumpkin pie spice!. Stir in pumpkin puree, eggs, and lemon juice!. Pour mixture into prepared pan!. Spread the mixture evenly!.

Bake at 375 degrees F (190 degrees C) for 15 minutes!.

Lay a damp linen towel on the counter, sprinkle it with confectioner's sugar, and turn the cake onto the towel!. Carefully roll the towel up (lengthwise) with the cake in it!. Place the cake-in-towel on a cooling rack and let it cool for 20 minutes!.

Make the icing: In a medium bowl, blend cream cheese, butter, vanilla, and sugar with a wooden spoon or electric mixer!.

When the cake has cooled 20 minutes, unroll it and spread icing onto it!. Immediately re-roll (not in the towel this time), and wrap it with plastic wrap!. Keep the cake refrigerated or freeze it for up to 2 weeks in aluminum foil!. Cut the cake in slices just before serving!.

What about my spooky little meringue ghosts with chocolate chip eyes!? They're so cute!

Ingredients:
5 large egg whites, at room temperature
115g caster sugar
115g icing sugar
plain chocolate chips, to decorate

Method:

1!. Preheat the oven to 110°C/gas 1/4!. Line 2 baking sheets with non-stick liner or baking parchment (meringue can stick on greaseproof paper and foil)!.

2!. Tip the egg whites into a large clean mixing bowl (not plastic)!. Beat them on medium speed with an electric hand whisk until the mixture resembles a fluffy cloud and stands up in stiff peaks when the blades are lifted!.

3!. Now turn the speed up and start to add the caster sugar, a dessertspoonful at a time!. Continue beating for 3-4 seconds between each addition!. It's important to add the sugar slowly to prevent the meringue from oozing later!. However, don't over-beat!. When ready, the mixture should be thick and glossy!.

4!. Sift a third of the icing sugar over the mixture, then gently fold it in with a big metal spoon or rubber spatula!. Continue to sift and fold in the icing sugar a third at a time!. Again, don't over-mix!. The mixture should now look smooth and billowy, almost like a snow drift!.

5!. Scoop the mixture into a piping bag with a 1!.5-2cm nozzle!. Squeeze into ghost-like shapes about 3cm apart!. Carefully add the chocolate chip 'eyes'!.

6!. Bake for 1 1/2 hours, so the meringues are still white but can be lifted from the paper without sticking!. Turn off the oven, leave the door ajar and leave the meringues until cold!. (The meringues will now keep in an airtight tin for up to 2 weeks, or frozen for a month!.)
