HASH BROWNS BREAKFAST CASSEROLE
3 c!. croutons
1 1/2 c!. bulk sausage, browned and drained
2 c!. milk
1 can cream of mushroom soup
2 lb!. bag frozen hash brown potatoes, thawed
2 c!. sharp Cheddar cheese, shredded
4 eggs, well beaten
3/4 tsp!. dry mustard
1/2 c!. milk
Place croutons in 9 x 13 inch pan!. Top with 1 1/2 cups of cheese and the sausage!. Cover with mixture of eggs, milk and mustard!. Refrigerate overnight!. Mix mushroom soup with milk and pour over the top!. Cover the potatoes and top with 1/2 cup cheese!. Bake at 300 degrees for 1 1/2 hours or at 325 degrees for 1 hour!.

BREAKFAST CASSEROLE
2 lbs!. pork sausage (1 hot, 1 mild)
3 c!. milk
1 tsp!. salt
1 1/2 c!. shredded cheddar cheese
9 eggs, beaten
1 1/2 tsp!. dry mustard
1 sm!. bag Ore Ida hash browns
Cook sausage over medium heat until done, stirring to crumble!. Drain well on paper towels, set aside!. In same skillet, brown hash browns, over medium heat!. Combine sausage, hash browns and remaining ingredients, mixing well!. Pour into a well greased 13 x 9 x 2 inch baking pan!. Refrigerate covered, overnight!. Bake at 350 degrees for 1 hour!.
Makes 8 to 10 servings!.

POTATO BREAKFAST CASSEROLE
1 (6 oz!.) pkg!. frozen hash brown potatoes
3 tbsp!. butter, melted
5 slices bacon, fried crisp
4 oz!. Jack cheese, shredded
1 green onion, minced
4 eggs, beaten (I use x-large eggs)
1/2 c!. cottage cheese
1/2 tsp!. salt
Dash pepper
4 drops Tabasco sauce
Small can diced chilies (optional)
Grease an 8" pie pan!. Spread hash browns on bottom and up sides!. Brush with melted butter and bake at 425 degrees for 25 minutes!.
Fry bacon until crisp, drain grease and crumble bacon; set aside!.
In a bowl beat eggs, add minced onion, cottage cheese, Jack cheese, salt and pepper, Tabasco sauce and crumbled bacon!. Stir to mix!. Pour into potato lined pan!.
This may be covered and refrigerated until next day or baked immediately!. Bake at 350 degrees for 35 to 40 minutes!.

8 slices white bread with the crusts removed
8 oz!. shredded Cheddar cheese
4 eggs
2 c!. milk
1 tsp!. dry mustard
1/2 tsp!. pepper
1 lb!. sausage
1/2 box Betty Crocker Hash Browns with onions
Cook the sausage (this can be done the day before)!.
Grease bottom of 9x13 glass baking dish!. Push the 8 slices of bread into the bottom of the dish!. Put the layer (1/2) box of the potatoes on top of the bread!. Then put on the sausage followed by the cheese!.
Beat the eggs, add the milk to the eggs and add the mustard and pepper!. Pour this on top of the ingredients in the baking dish!. Cover with aluminum foil and refrigerate overnight!. Bake in the oven, uncovered, at 350 degrees for 40 minutes or until done!. Can be reheated in the microwave!.
