Why don't my onions seem to cook down anymore?!
I never used to have a problem getting onions to turn sweet and soft in dishes like scrambled eggs or a casserole like meatloaf!. What's going on!? Have onions changed over the years!?

Maybe you're rushing the cooking and need to slow down a tad!. Low even heat with peanut oil and the onions should brown nicely!.Www@FoodAQ@Com
They will still caramelize but it just takes a long time!. I make the caramelized onions to go with our liver and onions but I noticed it takes a little longer to make them brown!. Some people add sugar to them but I just like to cook them down!. It might take longer because there is more water in them!.Www@FoodAQ@Com
Dice them, make them really small!. You shouldn't have any problem then!. That is what I do and I have no trouble at all getting them to cook!. The other thing you can do is use dried onions!. They are really good too!.Www@FoodAQ@Com
