Of course, you are going to need a Steel, Chef's knife, serrated, boning and paring knife, this is your basic starting set!. J!.A!. Henkles sell this set for under 200, Wustof's will cost you more but will last a life time, Forshners are OK and well within your budget, Kitchen Aid is also a personal recommendation of mine!. Cutlery!.com has a variety of knives, brand names and prices to match, most with free shipping for purchases of 100$ or more! I guess whatever knives you purchase, the most important aspect of it is how well you take care of them!. Stone sharpening them, using the steel daily, hand washing them, storing them properly and they will last a long time!. My first gifted set of knives where Forshners and they are still with me, I also have every brand of knife I have listed and I do take care of them!. My Wustof's are a major bi-monthly purchase, but worth their weight in gold (so to speak) So, go out and hold your knives, don't buy online without feeling them and seeing if they are a fit for you!. Hi Mady B!. Talk to a chef, I mean go to the extent of making an appointment with the head chef at a hotel restaurant!. He will set you straight!. Some high schools are on a limited budget as far as equipment is concerned!. If you lived in Montreal I could have introduced you to one of the chefs!. For two hundred bucks you can get a good set, just mark them in some way so you can identify them when your in a class!.If food is the direction you want to go, then here is a good introduction to it!. Basically I use three knives, I do have more!.
