How do you get that nice, crispy sugar topping on top of muffins and breads?!


Question: How do you get that nice, crispy sugar topping on top of muffins and breads!?
One of the local restaurants makes blueberry muffins and apple bread that they put sugar on top of!. It's larger sugar crystals and it's almost crispy when you bite into it!. It's not cinnamon/sugar but just sugar!. Is it a special kind of sugar you buy!? Or do you mix with water and put on top before baking!? How do I do it at home to my muffins!?!Www@FoodAQ@Com

It is a coarse sugar; turbinado or just decorating sugar will work!. You can either brush egg white or water on the top of the unbaked muffins and then sprinkle with the sugar!. If you use water, use it sparingly! I have used just regular granulated sugar and it seems just fine to me!.Www@FoodAQ@Com

it's call turbinado sugar (look for it in the baking aisle) you can get it or raw sugar then just brush your muffins and bread with an egg wash to attach before you bakeWww@FoodAQ@Com
