Favorite additions to traditional Stuffing (dressing)?!

SANTE FE CHRISTMAS TURKEY STUFFING
1 pound kielbasa or other smoked sausage, halved lengthwise and cut
into 1/4-inch slices
4 cups chopped onions (about 2 very large)
2 cups chopped celery
1 1/2 cups chopped pecans (a 6-ounce can)
1 stick (1/2 cup) unsalted butter
an 8-ounce package herb-seasoned stuffing buttermilk corn bread or
3 cups packaged corn bread stuffing
2 tablespoons crumbled dried sage
1 1/2 cups chopped fresh parsley leaves
three 4-ounce cans green chilies, chopped, or 5 to 7 fresh poblano
chilies, roasted and peeled and chopped, or to taste
1 cup chicken broth, or to taste
In a large heavy skillet cook the kielbasa over moderate heat, stirring, until it is browned and transfer it with a slotted spoon to a large bowl!. In the fat remaining in the skillet cook the onions and the celery, stirring, until they are softened and add them to the bowl!. In the skillet sauté the pecans in the remaining fat and the butter over moderately high heat, stirring, until they are golden and add the mixture to the bowl with the stuffing, the corn bread, the sage, the parsley, and the chilies!. Add enough of the broth to moisten the stuffing to the desired consistency and let the stuffing cool completely!. Makes about 14 cups!.Www@FoodAQ@Com

You know, I haven't thought a lot about this, but now that I am!.!.!.
Well, I usually do a sausage stuffing, so I add ground sausage!. I also do one with ground chicken, as my sister doesn't eat red meat!.
Can you believe, up until a year ago, I hadn't really tried stuffing with cranberries!? I really liked it, though, and now I'm contemplating perhaps serving it with fresh cranberry sauce on top!. Or maybe a cranberry orange sauce, that sounds good!.
You could try an italian-type stuffing!. Do a crusty french bread stuffing from scratch, and toss with some italian dressing, black olives, red onions, and parmesan cheese!. Just a thought!.
Mushrooms would be a tasty addition to a traditional sage-type stuffing!. And various nuts and fruits would add some contrast!.

I like to make it in a crockpot so that there is plenty of room in my oven for my green been casserole, sweet potato souffle, my Pumpkin Brownies and of course pumpkin pies!. :)

This recipe is from my Rival crockpot cookbook!.
1 cup butter or margarine
2 cups chopped onion
2 cups chopped celery
1/4 cup parsley sprigs
2 cups chopped mushrooms
12 cups bread cubes, slightly dry
1 teaspoon poultry seasoning
2 eggs, well beaten
1 1/2 teaspoons salt
1 1/2 teaspoons sage
1 teaspoon thyme
1/2 teaspoon pepper
1/2 teaspoon marjoram (optional)
3 1/2 cups chicken broth or turkey broth
Melt butter in a skillet and saute onion, celery, parsley, and mushrooms!.
Pour over bread cubes in a very large mixing bowl!. Add all seasonings and toss well!.
Pour in the broth and mix well!. Add eggs and mix well again!. Pack mixture lightly into the crockpot!. Cover and set to high for 45 minutes then reduce to low to cook for 4 to 6 hours!.
Yield: 6 - 8 servings

Hi Chef_ren, your like me, always looking for a twist!. This year I have been hitting the alcohol a bit ( in cooking)!. We had a turkey, and I did the stuffing the regular way separately, but added some brandy this time!. Just be careful on the quantity you use, and don't do what I did left the shot glass and bottle in easy reach, I was totally wasted by the time I was done!.

CHEESE! I don't cook the stuffing in the bird, but on the stove top!. I add grated sharp Cheddar cheese to it!. I sometimes make a "stuffing casserole" with diced chicken or turkey, stuffing, and cheese -- at other times of the year, of course, not Thanksgiving!. It's surprisingly delicious!.Www@FoodAQ@Com

I use sausage and celery, sage, onions and some basil but the one thing I love to add to my stuffing is chestnuts (Chopped)!. I use Chicken Broth too and to keep it extra moist yes I had some melted butter!.!.!.Www@FoodAQ@Com
Apples, dates and pecans work well together in stuffing!. Squash (sweet like acorn, etc) and pepitas (hulled pumpkin seeds, work well in cornbread stuffing!.Www@FoodAQ@Com
