Baking powder vs. Baking soda?!
Okay for this "make-it-from-scratch" cookie recipe, I need 1 teaspoon of baking powder!. Is Arm & Hammer Baking Soda the same thing!? Or will it work with a different amount or something!? Www@FoodAQ@Com

Generally speaking, baking powder can not be substituted for baking soda since this will leave excess acidic compounds in the food which may affect flavor, texture and colorBaking soda, combined with an equal measure of cornstarch and twice as much cream of tartar, can be used to replace baking powder!. Use about one quarter the amount of baking soda as the recipe calls for baking powder, and then scale the cornstarch and cream of tartar accordingly!. Baking powder is how your cookies will rise!. Baking soda will not work, baking powder reacts to moisture in the cookie dough to create bubbles and make the cookies grow!. Baking soda in general reacts to acid compounds such as vinegar, or lactic acid in milk!. Your cookies will end up flat and hard if you do not use baking powder!.
