How do you make cornbread from scratch?!


Question: How do you make cornbread from scratch!?
I want a good recipe, that you know works!. It's just we don't have any cornbread in a box type stuff in Cairns >!.< Not even at a store that sells international foods, and most of the people around here haven't heard of it, except for the few Americans :P And my dad (one of the few Americans) would only make cornbread with the ready-to-make sorta stuff so he doesn't know how to make it!.Www@FoodAQ@Com

2 heaping tablespoons butter flavored Crisco
2 eggs
2 cups cornmeal, yellow or white
1 cup all purpose flour
1 teaspoon sugar
whole milk
1/2 teaspoon salt
1/2 teaspoon pepper
1 10" cast iron skillet

Mix together cornmeal, flour, sugar, salt and pepper!. Add milk until you have the consistency of a cake batter!. Add eggs and mix well!.
In the skillet, melt shortening!. Move the skillet around until well coated!.

Pour the remainder into the batter and mix!. Pour the batter into the skillet!.

Bake at 375 for 40 minutes or until light brown!.

*Cornbread will not stick to a seasoned skillet!.

Homemade Corn Bread Mix and Baking Instructions

4 1/4 cups all-purpose flour
4 cups cornmeal
3/4 cup sugar
1/4 cup baking powder
1 teaspoon salt
1 cup shortening

ADDITIONAL INGREDIENTS:
1 egg
1 cup milk


DIRECTIONS
In a bowl, combine the dry ingredients; cut in shortening until crumbly!. Store in an airtight container in a cool dry place or in the freezer for up to 6 months!.

BAKING INSTRUCTIONS:
To prepared corn bread: In a bowl, beat egg; add milk and mix well!. Stir in 2-1/3 cups corn bread mix just until moistened (the batter will be lumpy)!. Pour into a greased 8-in!. square baking pan!. Bake at 425 degrees F for 20-25 minutes or until bread tests done!. Yield: 9 serving per batch 45 servings total for all batches!.

BOB WALKER'S PERFECT CORNBREAD

2 cups white martha white self-rising corn meal (not cornbread mix!)
buttermilk

Heat the oven to 500 degrees F, and preheat a well-seasoned cast iron skillet in the oven!.
Meanwhile, in a large bowl, combine cornmeal and enough buttermilk to make a pourable mixture!. Once the skillet is hot, remove it from the oven, grease the skillet thoroughly, and pour the cornmeal-milk mixture into the hot skillet!. Return it to the oven, and cook the cornbread until a brown crust forms on top of the bread!.

QUICK CORN BREAD

Ingredients

* 1 cup flour
* 1 cup yellow cornmeal
* 3 tablespoons sugar
* 1 1/2 teaspoons baking powder
* 1/2 teaspoon coarse grained salt
* 1 cup skim milk
* 1/4 cup canola or vegetable oil
* 1 large egg or 2 large egg whites, lightly beaten

Directions

Heat oven to 400 degrees F!. Spray a 9-inch square baking pan with non-stick cooking spray!.

Combine flour, cornmeal, sugar, baking powder, and salt in a large bowl!. Set aside!.

In a separate smaller bowl, whisk together milk, oil and egg or egg whites!. Pour the wet ingredients over the dry and, using a fork, stir until just combined!. Do not overmix!. Spread batter evenly in pan and bake 20 to 25 minutes, or until a toothpick inserted in the center comes out clean!. Cut into squares or triangles and serve immediately!.

I'll tel you how I make my cornbread, and how my grandmother and great-grandmother made it!.

Put some yellow cornmeal in a bowl!. You need not measure it!. Put in a little salt and pepper!. Crack an egg in, and pour in buttermilk!. NOT reduced fat buttermilk, REGULAR buttermilk!. Not nonfat either!. Stir in the buttermilk until the batter is thin enough, not runny but not too thick!. You'll need to feel it out!.

Heat a good cast-iron skillet over high heat, and melt a chunk of butter in it!. When the butter melts, pour it into the batter and stir it in!. Then pour the batter into the hot skillet on the stovetop!. Immediately put into a 450 degree oven and bake until golden brown!.
