I am going to attempt for my dad...?!
a special apple pie!. My dad can not have white flours/starches or sugar!.
So I am going to make an apple pie with stevia for sweetening, but my question is with the crust!. I am going to use wheat flour, and was going to maybe grind up some oatmeal!. DO you think this would work!? Does it need some white flour for elasticty!?Www@FoodAQ@Com

Answers:
I think that would be fine!. Wheat flour will work just as well, and the oatmeal will give it a nice flavour!. Add a bit of brown sugar or maple syrup for a unique flavour!. Maple or golden syrup will also help hold the crust together, too!.
On a different note, it sounds like an apple crisp would be much easier, and I think it's even better than pie!. :)
Here's my favourite recipe:
1 cup flour
1 cup oats
Whatever sweetener you are using
2 teaspoon cinnamon
1/2 - 1 teaspoon allspice
5 1/3 tablespoons butter (tablespoons are easy to measure because the papers are pre-marked)
Mix that all together!.
Cut up four cups of apples, or really however many fit well in the pan, and rest them in the bottom of your pan!. (You can peel them if you like, but it's not necessary!.) Sprinkle the mixture of top of the apples!. Bake for about half an hour at 375 Fahrenheit!.
EDIT - Haha, it looks like I took too long to answer, some one else has already suggested an apple crisp!. Took me a moment to remember the recipe!. xDWww@FoodAQ@Com

for pie crust, you DO NOT need elasticity!. that is what makes pie crusts tough and that is why the recipes usually tell you not to over work the dough!. How about an apple crisp with oatmeal(3 cups) and rice flour(1/2 cup) and a bit of butter (1/2 cup, melted)and cinnamon(1/2 teaspoon) to hold it together and pat that in a pan,(9x13 size) reserving some for topping!. then layer your sliced peeled apples across the top of the oatmeal crust and sprinkle with more cinnamon and drizzle with one of those artificial sweetened pancake syrups!.You could also mix the apple slices with the stevia and cinnamon and then layer on the crust!. Sprinkle the reserved oatmeal mixture on top and bake at 350 till done!.Www@FoodAQ@Com
