It's actually pretty easy!.

Tomato and cheese taste:
Place about 6 tomatoes(sliced/cut) into a pot, add about half a cup of water and set it to boil!. Cook it over small heat, till the tomatoes are mushy and turn paste like (about 20 minutes)!.

Add it one/two onions that are chopped up!. Some powdered parmesan cheese, italian herbs, and one chilli padi(remove seeds and chop it up)!. Cook for about five more minutes!. And it's ready to serve!. Www@FoodAQ@Com

1 (28 ounce) can stewed tomatoes 2 tablespoons white sugar
1 (28 ounce) can crushed tomatoes 1 tablespoon dried basil
1 pound lean ground beef 1/2 teaspoon dried oregano
2 yellow onions chopped 1/4 cup fresh parsley
2 green bell peppers chopped 2 Bay leaves
5 cloves garlic chopped salt and pepper to taste

Instructions for Authentic Italian Spaghetti Sauce
Blend the stewed tomatoes and crushed tomatoes in a blender!. In a stock pot or large kettle, brown the ground beef with the onions, peppers, garlic!. Pour in tomatoes, and reduce heat!. Add sugar, basil, bay leaves and oregano, and simmer about 40 minutes!.

Remove bay leaves and season with salt and pepper before serving!.

Basic Marinara Sauce
1 can crushed tomatoes (28 ounces)
2 cans tomato paste (6 ounce cans)
1 can chicken broth (14!.5 ounce can)
2 tablespoons olive oil
? cup onion, chopped
1 teaspoon garlic, minced
1 teaspoon salt
? teaspoon ground pepper
? teaspoon ground cayenne pepper
? teaspoon cumin
? teaspoon fennel
1 teaspoon Italian seasoning
1 dash ground cloves, very small dash!
1 dash sugar
In a large stock pot, heat olive oil over medium heat!. Sautee onion until transparent!. Add garlic, sautee quickly for one minute, stirring constantly to prevent burning!. Add remaining ingredients, mix well!. Bring to just the boiling point, reduce heat to simmer, cover!. Let simmer for 1 1/2 - 2 hours, stirring occasionally!.

SPAGHETTI BOLOGNESE

1/2 lb!. ground round
1/2 lb ground sausage
1 (15 oz!.) can whole tomatoes
1 (15 oz!.) can tomato sauce
Dash of Louisiana hot sauce
2 med!. onions
5 garlic cloves
6 or 7 lg!. mushrooms
1 green pepper
2 tsp!. ready to use oregano
2 tsp!. ready to use basil
1 bay leaf
1/2 tsp!. dry thyme
Fresh ground pepper to taste
1/2 c!. olive oil
1 lb!. spaghetti
Parmesan cheese, grated
Extra virgin olive oil

Peel and chop onions, garlic cloves, mushrooms and green pepper!. Put a big ole black skillet on burner and heat olive oil on medium fire!. Add onions, garlic, mushrooms, and green pepper!. Fry for 5 minutes or until onions turn clear and garlic starts to smell strong!. Pour all ingredients into a bowl and reserve for later!.
Return skillet to heat and add ground beef!. Fry until browned and break apart into small clumps!. Returned fried vegetables to the skillet!. Add whole tomatoes and chop them up!. Add tomato sauce, oregano, basil, bay leaf, thyme and ground pepper!. Mix ingredients well!. Cover skillet and turn fire down to simmer!. Simmer for 30 minutes!. At the last minute sprinkle some tony's on there!.

SPAGHETTI SAUCE

1 teaspoon white sugar

3/4 teaspoon dried basil
1/2 teaspoon ground black pepper
DIRECTIONS
In a large saucepan over medium heat, saute onion and garlic in olive oil until onion is translucent!. Stir in tomatoes, salt, sugar and bay leaf!. Cover, reduce heat to low, and simmer 90 minutes!. Stir in tomato paste, basil, 1/2 teaspoon pepper and simmer 30 minutes more!. Serve over pasta of your choice!.!.!.!.!.

The basic sauce
You can buy a tin of chopped tomatoes from your local Lidl for 14p (about 0!.22 Euro) (of course, if you're lucky enough to have fresh tomatoes, use them!), and add your own favourite herbs!. Oregano always works well with pasta, basil with tomatoes, or use some Italian Seasoning, or better still, experiment; it's fun! But don't forget the garlic - raw!

That's the basic sauce!. You can then chuck in some mushrooms, onions, vegetables, tin of tuna or whatever you fancy!. You will then have a delicious pasta sauce to your own taste, for a fraction the cost of a jar of Ragu or Dolmio!. And you'll have the satisfaction of having made it yourself!.

Of course, you don't have to use tomatoes at all!. I think I'd soon get fed up with pasta if I always had to have tomatoes with it!. Try a cheese sauce as in Maccheroni Cheese, or add bacon (alla carbonara), as in this recipe that I had whilst in Italy a few years ago!. Reproduced here from memory, but it certainly works extremely well!.

A simple Carbonara
Ingredients (Serves 2):

* Pasta (tagliatelle is the traditional pasta for Carbonara but spaghetti works fine); allow 3-4 oz (75-100g) per person
* Bacon, 2 or 3 rashers, chopped into small pieces (?in/1cm squares or less)
* 1 medium egg (beaten)
* Grated parmesan cheese - about 1 oz (28g) I guess; more if you like (use fresh; you could use a strong cheddar but it really isn't the same)
* a pinch of nutmeg
* garlic, finely chopped, to taste
* Olive oil
* optional: Mushrooms and herbs (e!.g!. Italian Seasoning, Oregano, Pizza&Pasta Seasoning)

Method:

* Fry the bacon (and mushrooms, if using) in a little oil!. You can use an ordinary, cheap olive oil for this!. Do NOT fry the garlic!*
* Cook the pasta!.
* Whilst bacon is frying and pasta cooking, beat the egg!. Add nutmeg!.
* Drain pasta, and add a touch of olive oil (+ herbs as required)!.
* Add egg mixture, garlic, cheese, any herbs and contents of frying pan to saucepan containing pasta and return to the heat for a minute or so!. Mix in well!.
* Remove from heat and add more olive oil, to taste!. Use the best quality oil you can get at this point, and be generous!

It's that easy! (hope I didn't forget anything!)

If you've had shop carbonara or followed a recipe book, it probably had cream in it!. Forget the cream - it's unhealthy, makes the sauce far too heavy, and apparently isn't the traditional way!.

*Never fry garlic! It spoils the natural flavours and destroys the valuable whatever-it-is which is supposed to be so healthy for you (this is my opinion; others may differ!)Www@FoodAQ@Com
