First, if the pasta is fresh, it will only take a few minutes (4-6) to cook!. If it has been dried, about 8-12, depending on your liking!. I like my aldente!.

I would cook up the bacon in a saucepan!. Remove the bacon once crunchy!. The reason you want it crunchy is for the texture you will be adding to the dish!. If you dont want to do it in a saucepan, lay it down on a cookie sheet and cook it in the oven, 375, turning periodically for 15-25 minutes until done!.

If you cook in the saucepan, remove 1/2 of the bacon drippings!. Slice the leek thinly (and make sure you wash it very well, several times, as dirt can often get trapped in it!. some recommend soaking!.!.!.) and cook it in the drippings, removing the bits that have been left over!. If you choose the oven method, you can pour 1/2 of the drippings into the saucepan or leave them out!. You can always substitute olive oil!. Cook leaks through!.

Add creme fraiche to the leeks!. Stir and season with salt and pepper!.

*Meanwhile, heat your pasta pan, fill with water, add 3 tsp!. salt - only chance to flavor the pasta - bring to a boil and cook as recommend above!.

Now, depending on what type of cheese - parmesean vs!. mozerella vs!. cheddar, will depend on when you add it to the dish!. If it is a hard cheese that will be grated, such as parm, or a really soft cheese, such as ricotta, add it to the leeks, creme fraiche now!. If it is cheddar or mozerella, you may have to add the strained pasta first, stir, then add the cheese so it will melt through!.

*You can always reserve some of the pasta water to thin the sauce if needed!.

After the cheese and pasta has been added, stir in the bacon pieces, breaking them up as you put in!. Stir and serve!. You could also reserve some of the bacon pieces to garnish on the top of your dish, as well!. Www@FoodAQ@Com
