How do you cook fresh beets, taken out of the ground?!
I've ever only cooked canned beets!. Do I peel them first, do I blanche them then peel!? Thanks for your answers!.Www@FoodAQ@Com

The skins have a majority of the vitamins so leave them on!. Just scrub them first with a veggie brush and then boil them until just fork tender!.Www@FoodAQ@Com
You can cook beets in a couple ways either boiling them (add a bit of cumin or caraway to the cooking liquid for a nice added flavor) until tender or you can roast them with a bit of olive oil!. You can peel them either before or after cooking or clean them well trim the roots off and leave skins on (much like potatoes many of the vitamins and minerals are contained in the skin), it really doesn't matter!. I'd imagine more of their nutrional content would be lost peeling them first (leaches into the water) and peeling them cooked is a bit easier (the outer skin comes off very easily cooked)!.Www@FoodAQ@Com

Wash them really well, to get all of the soil off of them!. Coat the skin with oil and salt and pepper to taste!. Place in aluminum foil pouch and cook in a pre-heated 350 deg, F!. oven for 30-45 min or until a knife slipped in comes out easily!.Www@FoodAQ@Com
