I actually make "Voodoo Chili"! HOT HOT HOT but GOOD GOOD GOOD!

You may be creative as you want (at a chili cook off, my dad had chili made with rattlesnake meat! for real!)

Ingredients

1 tbs!. oil

5 lbs!. ground beef

5 lbs!. ground pork

2 lbs!. cubed pork

2 lbs!. Conecuh sausage, sliced into bite-sized pieces (OR Andouille sausage)

1 large bell pepper, chopped

2 medium onions, chopped

2 tbs!. flour

6 tbs!. garlic powder (divided into 4 tbs!., then 2 tbs!.)

6 tbs!. ground cumin (divided into 2 tbs!., then 4 tbs!.)

2 tsp!. liquid smoke

1 (14 oz!.) can beef broth

1 (14 oz!.) can chicken broth

1 (12 oz!.) can Coca-Cola Classic

2 (29 oz!.) cans tomato sauce

2 (28 oz!.) cans diced tomatoes, drained

4 (4 oz!.) cans chopped green chilies

18 tbs!. chili powder (divided into 6 tbs!., then 12 tbs!.)

2 tsp!. chipotle chili powder

2 tsp!. ground white pepper

2 tsp!. coarsely ground black pepper

2 tbs!. salt

6 tbs!. minced dried onion

6 tbs!. cilantro

1 c!. chopped green onions

Instructions

Add oil and brown meat!.

Add bell pepper and onions and cook until wilted!.

Add 1st division of garlic powder, ground cumin and chili powder, then add all other ingredients EXCEPT for last three (minced onion, cilantro and green onions)!.

Cook uncovered for about 90 minutes on medium/low heat!.

Stir frequently!.

When 90 minutes is up, add 2nd division of garlic powder, ground cumin and chili powder as well as the minced dried onion!.

Continue cooking/stirring for another 30 min!.

Turn off heat and add cilantro and chopped green onions, just before serving!.

Makes a whopping 3 gallons!.
