Question: I'm trying to plan a 7 course dinner for my fiance!. Some ideas!?
I really want to make a traditional 7 course dinner for my fiance for Christmas!. I'm starting now so that I can do a few practice rounds before the actual meal!. Like I said, it's going to be Christmas, so can someone give me a rundown of what constitutes a 7 course meal and some ideas for each course!. Something festive and delicious!. He's a meat and potatoes guy, so nothing like fois gras or anything!. I think I'll keep that until later on in our relationship!. I would rate myself as an intermediate cook!. I'm not absolutely fabulous, but I'm well past the basics and love a Challenge!. I am a bit tight on the budget (especially around Christmas) so anything I can do to cut corners financially as well!. 7 course dinner menu (Prime Rib)



1st Course
Appetizers

Walnut, Arugula and Gorgonzola Crostini
Crostini topped with toasted walnuts, Gorgonzola cheese and freshly shredded Arugula leaves

and

Fresh Shrimp served on ice with Cocktail sauce
an easy beautiful tasty crowd pleasing shrimp cocktail appetizer






2nd Course
Seated Appetizer

Baby Artichokes
a unique baby artichoke presentation with a zesty mustard dipping sauce







3rd Course
Salad

Arugula salad
uniquely served with mushroom stuffed salmon lox balls







4th Course
Sorbet

Grapefruit and Mint Sorbet
a refreshing flavored sorbet served before the main entree







5th Course
Main Course

Prime Rib
perfectly roasted prime rib served with flavorful Au Jus and Horseradish sauces

Small New Red Potatoes
tossed with white truffle oil

Julienne Snow Peas and Carrots
a simple refreshing colorful and delicious side dish for Prime Rib

Cherry Tomato flower - Garnish
very easy to make cherry tomatoes into a flower







6th Course
Dessert

Ice Cream Chocolate Nut Timbale
an easy dessert - invert ice cream cups onto chilled serving plates and decorate with chocolate sauce






7th Course
Lattes

in glass cups lined with paper doily and served with chocolate covered Starbuck crepe cookie

easy 7 course meal:

keep in mind that each serving will be minimal and just to taste!.

- A small non-starched soup or anti-pasta
- chilled, cooked shrimp or sushi
- A good glass of wine, keep it a white and minimal!. 4oz to clean the pallet!.
- Main course!. Fish / rice OR pork loin and carrots!.
- small glass of good port and some hard cheese!.
- a small glass of Sauv!. Blanc and some mellon!.
- Ice cream and a tart or some greek baklava!.

A nice start is a light soup or consomme!.
Try an asparagus soup, or a French onion!.

Oyster or Crayfish Vol ua Vants are also good!.

( I have often found that if you have too much before the main meal by the time you get to that you are no longer hungry)Www@FoodAQ@Com

It HAS to be seven courses!?!? Do you want to eat!? I mean, is this a meal where you have to get up and leave to serve the next thing!? That does not sound like a lot of fun!. Here is how I wow my family, and I get to enjoy it, too!.

Prime Rib roast, cooked rare in the middle!.
Horseradish sauce with prepared horseradish mixed with sour cream
Yorkshire pudding, which is really a pastry puff!. it is amazing and stupidly simple to make!.
Green Beans sauteed (ok, fried) in bacon fat with the bacon bits and almond slices
Potato Au Gratin or Scalloped Potatoes!.
For dessert, either traditional pie a la mode, or a pumpkin cheesecake (really, let Sam's Club or Costco do that for you)

My first gut reaction is to tell you not to do this!. Since he is your fiance, you will be marrying him soon, and he will expect alot of cooked meals from you if he knows you can cook!. I have been married for twenty-five plus years and I decided to do just what you are planning to do and I have been cooking everyday since!
Now, if you are really still going to do this here is my suggestion for you:
First Course
soup
something light and not to heavy, since it is Christmas you might try a on onion/leek soup!.

Second Course
salad
use mixed greens, gorgonzola, craisins and candied walnuts!.

Third course
Prime Rib
twice baked potatoes
green beans
cranberries

Fourth course
sorbet

Fifth Course
Cheese and fruit
wine

Sixth Course
dessert and coffee

seventh course
sherry
