Answers:
You can saute some onion and potato with garlic prior to adding the chicken!. Saute on medium- medium high heat until the potatoes are cooked halfway and the onions have started to caramelize!. You may want to add the garlic last to prevent it from burning- which will give it a bitter taste!. Then, add the chicken!. Turn the heat up!. Make sure there is enough oil and heat to brown the chicken; you don't want to cook the chicken all the way!. Once the chicken has browned, add the soysauce, vinegar, peppercorns, a couple of bay leaves, and enough water to come up halfway the chicken and veggies!. Turn the heat down to medium low or medium!. SIMMER (do not boil) for 20-30 minutes, until the sauce has reduced to half and the potatoes and chicken have cooked all the way!. Taste the sauce to adjust seasonings and/or liquid!. Serve over hot Jasmine rice!
*For best results, use dark meat chicken with bones still attached!. (Drumsticks, thighs, wings) Thighs will take the longest to cook!. Wings take 15-20 min!. at a constant simmer to cook through!.Www@FoodAQ@Com

I add "edamame", peas, corns, and chinese broccoli!. Cook the vegetables in oil (stir fry) and add to the chicken after it is done!.
If adding potato, bake it, then cut, then add to the above mix to stir fry

Ingredients
3 pounds chicken thighs, cut into serving pieces
1/2 cup white vinegar
1/2 cup soy sauce
1/4 teaspoon peppercorns, crushed
1 tbsp brown sugar
5 garlic cloves, crushed
3 bay leaves
Salt to taste
Combine all ingredients in a pan, cover, and allow to marinate one to three hours!. Bring to a boil, then lower heat and simmer for 30 minutes!. Uncover the pan and allow to simmer for an additional 15 minutes or until most of the liquid has evaporated and the chicken is lightly brown!. Serve with white rice!.
