Can I substitute cake flour for all purpose flour?!


Question: Can I substitute cake flour for all purpose flour!?
I only have cake flour on hand and I need to make some Choc!.Chip Cookies for my hubby's work!. Do I need to change anything!? I heard I won't have to add baking soda!. Is that true!?Www@FoodAQ@Com

I think this may help!.

There are 3 basic types of flour, depending on the gluten content!. Bread flour has the greatest amount of gluten, therefore its used in pizza, bread, etc!. combined with a yeast to make the dough!.

All-Purpose flour has some gluten, but not as much as bread flour, thus can be used for bread but is good for cakes!.

Cake flour has almost no gluten!. Most cookies are made from low gluten flour!. Cookies also have a high ratio of shortening to flour, and you can generally follow the same recipe for cake flour vs all-purpose flour!. Cookies are very forgiving!.

Don't confuse cake flour with self-rising flour!. That's the type that contains baking powder already added to make it easy to use for biscuits, pancakes, waffles, etc!.
