Hi hon - try this one, it's ever so easy xxx I make butterscotch sauce with this, which is equally nice!.!. Here goes:-

BREAD PUDDING

A 2 pint (1!.25 litre) baking dish - well buttered

8oz/225g bread (brown or white) with the crusts cut off
10fl oz/275ml milk
2 oz/50g butter or margerine (melted)
3 oz/75g brown sugar (white will do just as well if you don't have brown)
2 level tablespoons of cinnamon powder
1 beaten egg
6oz/175g of dried mixed fruit and peel
Grated rind of half an orange

Preheat your oven to Gas mark 4/350F/180C

Break the bread into small pieces into a large mixing bowl!. Pour over the milk, give the mixture a good stir and leave for 30 minutes!. Now add the melted butter, sugar, cinnamon and beaten egg!. Using a fork, beat the mixture well making sure that there are no lumpy bits in it!. Stir in the mixed fruit and orange rind, spread the mixture evenly in your baking dish and bake in the pre-heated oven for 1 and a quarter hours!. This is equally nice hot or cold! :o) xxxxx

BUTTERSCOTCH SAUCE
2oz/50g butter
3oz/75g soft brown sugar
2 oz/50g granulated white sugar
5oz/150g golden syrup
4 floz/110ml of double cream
a few drops of vanilla essence

Place the golden syrup, butter and both the sugars in a medium, thick bottomed saucepan!. Heat slowly and gently till the sugars have dissolved and formed a liquid!. Then continue to heat gently for about 5 minutes and turn off the heat under the saucepan!. Gradually stir the double cream into the sauce and then a few drops of vanilla essence!. Carry on stirring until you have a lovely smooth sauce with no lumps!. This sauce can be used warm or cold, and will keep for a week in the fridge in a screw-top jar! Hope I helped! Happy cooking! :o) xxxxxxWww@FoodAQ@Com
