How do you make Fried Chicken?!


Question: How do you make Fried Chicken!?
I have tried to make fried chicken and every time I do all of the skin falls off of it so It looks like my chicken is going bald! The outside always gets too done while the inside remains kind of raw and I can't get it all of the way done without burning the outside!. Maybe I should stick to baking it, lol!.Www@FoodAQ@Com

Check out food network and Tyler's recipe, or Emrald has a good recipe for fried chicken!. I normally double dip my chicken!. I dip it in flour, then egg, then flour again!. I put it in the frig for about 15 minutes so the breading sets up and sticks to the chicken better when cooking!. It sounds like you may be cooking yours on too high of a flame!. Try cooking it on a medium setting next time!. Www@FoodAQ@Com

1 whole fresh chicken
1 1/2 cups all-purpose flour
1 teaspoon kosher salt
1 teaspoon fresh finely ground black pepper
Peanut oil (for deep-frying)




DIRECTIONS
Rinse chicken under cold water!. Pat dry with paper towels!. Cut chicken into 9 pieces (2 legs, 2 thighs, 2 breasts, 2 wings, and 1 or 2 pieces from the back)!. Combine the flour, salt and pepper in a large paper bag!.


Add enough oil to a 2-inch-deep cast iron skillet to come 2/3 up sides of skillet (about 2 cups of oil)!. Heat oil over medium-high heat until deep-fry thermometer registers 350 degrees F!. Add 2 chicken pieces to flour mixture in bag; fold bag to enclose!. Shake until chicken is well-coated!. Transfer coated chicken pieces to rack!. Repeat with remaining chicken pieces!.


Using tongs, carefully add chicken legs and thighs to hot oil!. Fry until chicken is golden on the outside, and chicken is cooked through, about 4 minutes per side!. Transfer fried chicken to clean dry towels on rack to drain!. Repeat with remaining breast, wing and back pieces (breasts will be done in about 3 minutes per side)!. Sprinkle fried chicken with salt and pepper!. Transfer to platter and serve immediately!.


NOTE:
For a crispier crust, mix 2 large eggs with 1 tablespoon water in large bowl!. Add the chicken pieces and soak them before coating with flour mixture!.

your oil is too hot!. I cook the chicken for 18 minutes in fryer with the oil around 320 F!. This will allow it to cook without burning the outside!.

Once you've cooked all the chicken in this manner crank up the oil to 365F and cook until golden brown (about 2- 3 minutes)

I always soak the chicken in salted buttermilk (about a tablespoon per liter) overnight or even better 2 days!.

If you use seasonings like paprika apply them after the final cooking along with a blend of other seasonings!. Paprika if used in the seasoned flour tends to burn very easily making the chicken look dark and unappealing!. by applying it afterwards you get the wonderful flavor without the burnt look!.

How many times you flour the chicken is a matter of taste!. I prefer to remove from the buttermilk, add to seasoned flour (flour with salt and pepper added) pat off acess, rest one minute then deep fry!. My father likes to take from buttermilk, dredge in flour, dip back into buttermilk then dipped into finely ground bread crumbs!.Www@FoodAQ@Com

CRISPY FRIED CHICKEN

2 1/2 to 3 lbs!. cut up frying chicken

SEASONED FLOUR:

1 1/2 c!. flour
1 tbsp!. garlic salt
1/4 tsp!. poultry seasoning
1 1/2 tsp!. black pepper
1 1/2 tsp!. paprika

Combine all ingredients; set aside!.

CRISPY BATTER:

2/3 c!. flour
1/2 tsp!. salt
3/4 c!. flat beer or water
1/8 tsp!. pepper
1 egg yolk, beaten

Combine flour and seasonings in bowl!. Combine egg yolks and beer!. Add gradually to dry ingredients!. Heat oil in deep fryer to 365 degrees!. Moisten chicken pieces!. Dip in seasoned flour, then batter, then back in seasoned flour!. Fry in hot oil 15 to 18 minutes until well browned!. Drain on paper!.

Fried Chicken for beginners

Here is the way I do it, and I will add a variation you might want to try!.

1 - Wash your chicken pieces to prevent salmonella, and rinse in water with a little white vinegar!.

2 - Put a cup of all-purpose flour in a 1 gallon freezer bag!.

3 - To the flour, add salt, pepper, garlic powder, and other spices of your choice, I like to add Emeril's Essence !. Close the bag and shake well to mix the flour and spices!.

4 - Pour about an inch of cooking oil, or melted shortening in a large skillet, one that has a lid!. Turn the heat on high to heat the oil!.

5 - Drop two or three pieces of chicken in into the flour bag, close it and give the bag a good shake to coat well!.

6 - Drop the chicken into the hot oil, and cover!.

7 - After about 3 minutes, turn the chicken and recover for another 3 minutes!.

8 - Turn heat down to medium, medium-low if it is an electric stove, and cook uncovered, turning frequently!.

9 - Cook until the internal temperature is 165* F!., or until juices run clear when you stick it with a fork!.


Variation:

In a large sealable container, mix buttermilk, lightly beaten egg, a few shakes of Tobasco Sauce, and some garlic powder!. Add the washed chicken pieces and let sit for at least half an hour!.

Put your seasoned flour in a large low-sided pan!. Dredge the chicken pieces in the flour until well coated!. Fry as directed above!.

Enjoy your chicken!.

wash chicken and then roll in flour
make sure your grease is hot when you first put the chicken in season with salt pepper and garlic salt!. then turn down the heat!. put lid on the chicken and turn in about 15 mintues and then cook the other side add more season to this sideWww@FoodAQ@Com

Bread your chicken (I find using corn flakes makes it nice & crispy) and fry on medium heat, turning as needed!. Once all sides are fried, put your pan of chicken in the oven to finish cooking!. Www@FoodAQ@Com
