I left pork chops in a brine for 5 days instead of 3, still ok to cook?!
So I took Anne Burrell's advise on brining pork chops for 3 days but then had to take off and now its been 5 days!. Should I throw them out or is it safe to cook and eat them!?

I am a former chef and do not brine anything less than 3-5 days, ribs, chops, pork hocks, pig feet, briskets and chickens!.
The longer you brine the more tender the meat, just rinse, brown and either braise or stew, even just pan fry them or BBQ them, just not to fast as the brined meat tend to dry out if cooked to fast!.Www@FoodAQ@Com

The abilty of the brine to preserve the meats depends on the strength of the solution!. But even a weak brine can keep fresh pork chops good for 5 days!. They will be fine!. I'd rinse them off and then cook them right away!. They will be fine!.
If your brine was really strong, take out the pork chops and let rest in an unsalted solution of either water, or applejuice, orange juice etc!.!.(what ever fits the flavor profile of the dish) Some of the salt will leach out into the juice and coversely some of the juice will seep into the pork until equilibrium is met!. Tasty results should happen in around 30 minutes!. To see if this is necessary you can always test one pork chop!. If its fine, great, if its too salty try the juice solution!.

Take them out of the brine and if they don't smell, they will be fine!. I am curious about the 3 days, I generally only brine something for 24 hours maybe 36 but will do some looking into that!. Always looking for new and innovative ways to cook pork chops!. Www@FoodAQ@Com
Absolutely!. The salt in the brine ensures that NO bacteria can survive!. I once left chops in the brine for 10 days and they were just fine!. Tasted like corned beef though, with a pork twist!. Not bad, but Beef is better this way!.Www@FoodAQ@Com
If they were refrigerated, they should be OK, but don't waste any more time before you cook them!.
If they were not refrigerated, I'd toss them out!. For that matter, I'd not eat them if they were unrefrigerated for 3 days!.

It may be safe, but they are not going to be worth the
time or the effort to cook!.
They will have little to no taste and hard as rocks!.
