Need recipes for fresh spinach?!
I have a bag of unopened fresh baby spinach that I need to use up!. I hate cooked spinach by itself, plain!. Does anyone have ideas for how I can use it !.!.quiche!? Soup, etc!? I'm kind of burned out on salads!.!.so was hoping for some other good suggestions!.Www@FoodAQ@Com

Ingredients
3 boxes frozen spinach, thawed and liquid squeezed out (you can always just chop the fresh stuff up instead)
1 bunch scallions, finely chopped, white and green parts
1/2 cup chopped parsley
1/2 cup chopped fresh dill
1 1/2 cups feta cheese, grated or crumbled
1/2 cup cottage cheese
5 eggs
1/2 cup cream of wheat
1 cup olive oil
Salt and pepper
10 leaves phyllo dough
Directions
Preheat the oven to 400 degrees!. In a large mixing bowl, add the spinach, scallions, parsley, and dill, and toss!. Add the cheese and toss again!. Add the eggs and then the cream of wheat!. Work the eggs and cream of wheat into the mixture with your hands!. After it is well incorporated, pour 1/2 cup olive oil over all and use a spoon to coat the mixture well!. Season with salt and pepper!.
Brush a 9 by 13 inch baking pan with olive oil!. Line the bottom of the pan with a leaf of phyllo!. Brush with olive oil and repeat with another 4 leaves!. Evenly spread the spinach mixture over the layered and oiled phyllo!. Add 5 more leaves, brushing each with oil!. With sharp knife, score top phyllo into serving size portions!. Bake for about 45 minutes or until the phyllo is golden brown and the mixture inside is piping hot!.

Strawberry spinach salad is a nice twist if you've never had it and are sick of salads!.!.!.

1 cup sliced fresh mushrooms

1/3 cup raspberry vinaigrette
DIRECTIONS
In a large salad bowl, combine the spinach, strawberries, mushrooms and bacon!. Drizzle with vinaigrette and toss to coat!.

This is gonna sound weird, but it's one of my favorite things to eat EVER: Spinach and Feta Omelet!. I don't have a recipe, because recipes are for squares, but here's a list of ingredients and what I do:

? c carrots, shredded or diced
? c mushrooms, sliced
2 c ricotta cheese
1 t oregano
salt
1 t pepper
2 c Alfredo sauce or béchamel sauce (if using Alfredo, you can replace up to ? c with milk or vegetable stock - just mix the sauce and milk before using)
? pound uncooked lasagna noodles
1 c mozzarella cheese, grated
Directions Heat oil, add onion, carrots, and mushrooms, and sauté, stirring frequently, until onions are soft, about 5 minutes!.
Meanwhile, prepare the spinach: if using fresh, wash, pat dry, de-stem (optional), and chop!. If using frozen, thaw, drain, and squeeze out excess water!.
Combine vegetables, spinach, ricotta cheese, oregano, a dash of salt, and pepper in the bowl!. Set aside!.
Preheat oven to 350!.
Spread about ? c of sauce in bottom of the baking dish!. Line with lasagna noodles, then spread about a third of the spinach mixture on the noodles!. Add ? c sauce, then another layer of noodles, then a third of the spinach!. Repeat with sauce, noodles, and spinach!. Top with the rest of the sauce, then sprinkle with mozzarella!.
Cover with aluminum foil and bake for 50 minutes!. Turn off oven, remove cover, and leave lasagna in warm oven for another 15 minutes, until brown and bubbly!. Let stand for a few minutes, and serve!.
It's slow, complicated, but oh so delicious!

Heavy cream
1 jar alfredo sauce
2 cans chicken stock
2 T butter
Salt, pepper, nutmeg
Vegetable oil
Sautee/sweat onions in some oil until soft, translucent, not browned!. Add in garlic once the softening begins and let cook about 3 mins more!.
Transfer the onions/garlic to a big pot and add in 2 cans chicken stock, 1 cup heavy cream, the jar of alfredo sauce, dash salt, pepper, and dash nutmeg and the butter!.
Turn heat to High and stir to combine!.
Once the mixture becomes hot, add in all of your spinach and continue to cook for 15 minutes on low/medium!.

Best pizza I've ever had was in Ortigia (Siracusa)!. It's called the Ortisei or some other places cal it the Origiana!. Anyway, thicker Sicilian crust, tomato sauce, cover the thing in spinach and some prosciutto, fresh mozzarella!. Here's the great part: in the last 5 minutes drizzle the top of the pizza with a combination of creme fraiche and whole cream mixed just well enough to make it pourable!. thicker is better!. then toss the pizza under the broiler until the cream begins to brown!. Thanks for making me think about that!. I know what I'm having for dinner now!.

Fresh baby spinach!. Add a touch of lemon, a dash of garlic and some oregano!. Then take lettuce, chopped parsley and apples, toss in a large salad bowl, then toss into the crap can and order a pizza!.Www@FoodAQ@Com
How about a spinach pie or a pasta dish!? Do cheese and spinach go together!?!? I wouldn't know i have never tasted spinach - it looks disgusting!! If cheese and spinach do happen to complement each other i suggest cheese and spinach pasta!.

* 2 large cloves garlic, crushed
* 1/2 cup red wine vinegar
* 1/2 cup lemon juice
* 4 teaspoons Worcestershire sauce
* 1 teaspoon dry mustard
* 1/4 cup Disaronno? Originale Amaretto
* Salt and pepper to taste
* 1/4 pound mushrooms, sliced
* 1 small red onion, sliced
Preparation:
Wash spinach!. Remove large stems and tear into bite-size pieces!. Store in plastic bags in refrigerator until ready to use!.
To make dressing:
Place bacon in a large skillet!. Cook over moderate heat, stirring occasionally, until bacon is crisp and all fat is rendered!. Remove bacon, reserve 1/8 cup bacon fat, discard rest!.
Return bacon fat to skillet and add oil, garlic, wine vinegar, lemon juice, Worcestershire sauce, mustard, Amaretto, salt, and pepper!. Simmer until blended!.
When ready to serve, place spinach, mushrooms, red onion, and reserved bacon in large salad bowl!. If you like a wilted salad, pour the dressing over very hot; if not, let cool a bit before serving; toss well!.
