Question: Anyone have a good recipe for healthy muffins!?
i need to make 6 muffins with the recipe as well, and was wondering if anyone had anything!. Please make it nut free, because my boyfriend has a allergy to nuts!.

Basic Muffins

Ingredients
250 ml milk
1 egg
1 tablespoon oil
240g flour (sifted)
1/4 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon sugar (sifted)

Action
Combine all together quickly and put it in muffin baking dish,
and bake in a 200°C preheated oven for 15 to 20 minutes!.

Note: Do not beat, the batter should not be smooth!.

Bran Muffins

Ingredients
2 tablespoons sugar
1 tablespoon cooking oil
1/2 teaspoon salt
1 egg
250 ml milk
2 teaspoons baking powder
120g flour
120g bran

Action
Combine all and bake in a 200°C preheated oven,
for about 15 to 20 minutes!.


Blueberry Muffins

Ingredients
240g pastry flour
1/4 teaspoon baking powder
200g granulated sugar
1 level teaspoon salt
1 egg (beaten light)
125 ml milk
2 tablespoons melted butter
200g blueberries

Action
a!. Sift together flour, baking powder, sugar and salt!.
b!. Mix with egg!.
c!. Add milk and butter, and lastly fold in blueberries,
dredged with flour!.
d!. Bake in preheated 200°C oven for about 15-20 minutes!.

Buckwheat Muffins

Ingredients
250 ml milk
1 teaspoon salt
1 tablespoon oil
4 teaspoons baking powder
2 tablespoons syrup
90g buckwheat flour
2 eggs (slightly beaten)
150g ground rolled oats

Action
a!. Add oil, syrup, and eggs to milk!.
b!. Sift all dry ingredients together!.
c!. Combine mixtures, stirring lightly!.
d!. Bake in grease muffin pans in 230°C oven, for
20-30 minutes!.

Berry Muffins (6 servings)

Ingredients
170g butter
110g sugar
1 egg white (beaten)
1 egg yolk (beaten)
180g all purpose flour
2!.5 teaspoons baking powder
1/4 teaspoon salt
125 ml milk
1/2 cup canned loganberries (well drained)

Action
a!. Cream butter and sugar together!.
b!. Beat them in the egg yolk!.
c!. Sift all dry ingredients together,
and add alternately with milk to the mixture!.
d!. Add berries and fold in egg white!.
e!. Bake in muffin pan at preheated 190 °C oven,
for 20-25 minutes!.

2/3 cup light brown sugar
1/3 cup canola oil
1 egg
Directions
1Preheat oven to 375 degrees F (190 degrees C)!. Grease muffin cups or line with paper muffin liners!.
2Mix together wheat bran and buttermilk; let stand for 10 minutes!.
3Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture!. Sift together flour, baking soda, baking powder and salt!. Stir flour mixture into buttermilk mixture, until just blended!. Fold in raisins and spoon batter into prepared muffin tins!.
4Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean!. Cool and enjoy!

"Muffins that combine the wonderful texture of apples with the warm taste of pumpkin!. A simple streusel topping gives them a little something extra!."
INGREDIENTS:
2 1/2 cups all-purpose flour
2 cups white sugar
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs, lightly beaten
1 cup canned pumpkin puree 1/2 cup vegetable oil
2 cups peeled, cored and
chopped apple

2 tablespoons all-purpose flour
1/4 cup white sugar
1/2 teaspoon ground cinnamon
4 teaspoons butter

DIRECTIONS:
1!. Preheat oven to 350 degrees F (175 degrees C)!. Lightly grease 18 muffin cups or use paper liners!.
2!. In a large bowl, sift together 2 1/2 cups all-purpose flour, 2 cups sugar, pumpkin pie spice, baking soda and salt!. In a separate bowl, mix together eggs, pumpkin and oil!. Add pumpkin mixture to flour mixture; stirring just to moisten!. Fold in apples!. Spoon batter into prepared muffin cups!.

Ingredients
3 cups of all-purpose flour
1 Tbsp baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

10 Tbsp unsalted butter (1 1/4 stick), softened
1 cup sugar
2 large eggs
1 1/2 cup plain yogurt
1 teaspoon grated lemon peel

1 1/2 cups blueberries
1 Tbsp flour (if using defrosted frozen berries)

Method
1 Adjust the oven rack to the middle-lower part of the oven!. Preheat oven to 375°F!.

2 Whisk together the flour, baking powder, baking soda, and salt and set aside!.

3 In a large mixing bowl, cream butter and sugar together, beating until fluffy!. Add eggs one at a time, beating until incorporated after each one!. Beat in the grated lemon peel!.

4 Beat in one half of the dry ingredients until just incorporated!. Beat in one third of the yogurt!. Beat in half of the remaining dry ingredients!. Beat in a second third of the yogurt!. Beat in the remaining dry ingredients and then the remaining yogurt!. Again be careful to beat until just incorporated!. Do not over beat!. Fold in the berries!. If you are using frozen berries, defrost them first, drain the excess liquid, and then coat them in a light dusting of flour!.

5 Use a standard 12-muffin muffin pan!. Coat each muffin cup lightly with olive oil or grapeseed oil using a pastry brush, or with a little butter!. Or use one of those convenient vegetable oil sprays!. Distribute the muffin dough equally among the cups!. Bake until muffins are golden brown, about 25 to 30 minutes!. Test with a long toothpick (we use a thin bamboo skewer) to make sure the center of the muffins are done!. Set on wire rack to cool for 5 minutes!. Remove muffins from the tin and serve slightly warm!.

1/4 cup wheat germ
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup blueberries
1 banana, mashed
1 cup buttermilk
1 egg
1 tablespoon vegetable oil
1 teaspoon vanilla extract

Preheat the oven to 350 degrees F (175 degrees C)!. Grease a 12 cup muffin pan, or line with paper muffin cups!.
In a large bowl, stir together the all-purpose flour, whole wheat flour, sugar, oat bran, quick-cooking oats, wheat germ, baking powder, baking soda and salt!. Gently stir in the blueberries!. In a separate bowl, mix together the mashed banana, buttermilk, egg, oil and vanilla!. Pour the wet ingredients into the dry, and mix just until blended!. Spoon into muffin cups, filling all the way to the top!.
Bake for 15 to 18 minutes in the preheated oven, or until the tops of the muffins spring back when lightly touched!.

1 cup blueberries
