CARROT CAKE
INGREDIENTS:
2 cups all-purpose flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 1/2 teaspoons ground cinnamon
4 eggs
1 1/2 cups vegetable oil
2 cups white sugar
2 3/4 cups shredded carrots
1 (8 ounce) can crushed pineapple, drained
3/4 cup chopped walnuts or pecans (I prefer pecans)
1 cup flaked coconut (optional)
DIRECTIONS
Preheat oven to 325 degrees F!. Grease and flour a 9x13 inch pan!. Mix together the flour, baking powder, baking soda, salt and cinnamon!. Set aside!.
In a large bowl, mix sugar, oil, and eggs!. Beat in flour mixture!. Stir in shredded carrots, crushed pineapple, chopped nuts and flaked coconut!. Pour into prepared pan!.
Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean!. Allow to cool
****If you want to cut the calorie content: Use 3/4 cup of oil & 3/4 cup of applesauce and cut the sugar to 1 1/2 cup!. It is still delicious!.

CREAM CHEESE ICING
1 (8 ounce) packages cream cheese, softened
1/4 cup butter, softened
2 cups powdered sugar
1 1/2 teaspoon vanilla extract
DIRECTIONS
In a medium bowl, cream together the cream cheese and butter until creamy!. Mix in the vanilla, then gradually stir in the confectioners' sugar!. Store in the refrigerator after use
*******If you like a less sweet frosting, you can adjust the ingredients (see below) & follow same instructions above:

1 box Duncan Hines spice cake mix
1 box vanilla instant pudding
1 teaspoon cinnamon
2 cups grated carrots
1 cup chopped nuts
Preheat oven to 350F degrees!.
Cream oil and sugar, add water, eggs, then dry ingredients!. Fold in carrots and nuts!. Pour into a greased 9x13 rectangular pan or 2 9" round pans!.
Bake at 350 degrees for 40 to 45 minutes or until toothpick inserted into center comes out clean!.
Top with cream cheese frosting, simply super good!

1 tsp!. vanilla
1 lb!. confectioners sugar
Combine butter, cream cheese, and vanilla!. Beat until smooth!.

Tee hee, tried and tested this one only yesterday!. I'de leave out the dessicated coconut the next time though, wasn't quite right!.

I love carrot cake! So, the other day, I made some and it tasted heavenly! Ah!.!.!. I loved it so much I wouldn't let anyone else have any! teehee!

I make an ordinary cake mix and add 3-4 largish grated carrots!. i!.e!.
1lb s/r flour
8oz butter/Stork
8oz granulated Sugar
3 eggs
carrots!.
Rub the stork into the flour until it resembles bread-crumbs!.
Add the sugar and carrots and mix well
Add the eggs, one at a time and mix in with 2 forks until you have a soft dropping consistency!. If it's a bit dry, add a drop of mile!. Take care as you can always add more but not take any out!.
Put into a greased/floured baking tin and put in at gas mark 4 for about 1 hour!. Test with a skewer or knife, if it comes out clean, the cake is done!. also to test, you can tap the bottom of the tin with your hand and if it sounds hollow, it's done!. Remove from oven and let it stand for 1/2hr before taking it out the tin!. Stand on a cake wire to cool!.

The recipe I always use is the one on the side of the Duncan Hines carrot cake mix box!. The side recipe adds crushed pineapple and raisins and nuts!. It's the best! I don't have a copy right now, but I'm sure to pick up a mix today; this question made me wish for a carrot cake!Www@FoodAQ@Com
