Answers:
That will be fine!. There are a few thai dishes that have potato and curry!. Usually, those potato dishes use YELLOW curry, but I'm sure it will be good with green too!!!

Try sweet potato! Peel, dice, and boil it!. It'll be soft and sweet and a great addition to your dish!. also, sometimes I add chick peas!.

This is what I made up:

Add other VEGGIES too, like red bell pepper, broccoli, sugar peas, mushrooms, slices of softened onions, etc!.Www@FoodAQ@Com

yes tyou can but remember you usually serve it with rice so you will have a carbo load,,,, have you thought of doing other veggies,, carrots, celerey, onion,sprouts,Www@FoodAQ@Com

Definitely add potato and consider adding other veggies as well like carrot and zucchini!. I made a chicken curry with veggies last week and it was amazing!. Www@FoodAQ@Com

I think it's fine!. I often frequent Thai restaurants and they use potato in curries all the time!. I am also Japanese and we use potato in our curries!. It makes it heartier!. Www@FoodAQ@Com
