You can start at lower temperature, but this is one of the downs of cooking with cast iron!. I love mine, and I just let it smoke, as long as get my cooking done in it!. Then I just open the window and turn on the fan!.Www@FoodAQ@Com

I cook on cast iron skillets every day of my life and I've never noticed mine smoking up the kitchen!. I start heating it up slowly on a low temperature!.!.!. then I proceed to get the steak out of fridge, (unless I took it out earlier to come to room temperature)!. I let it heat slowly for about 3, 4, or 5 min!. while I am trimming the fat off of the steak!. Season the steak with Steak Seasoning like Montreal by McCormicks!. Then when I'm ready to actually cook the steak, I turn up the heat but still not as high as I would for other skillets!. Add the cooking oil (Safflower) into the skillet and some cooking oil onto the steak, then proceed to cook your steak!. Put the oiled side of the steak down into the skillet, then just before your turn the steak over to cook that side, add another teaspoon of oil to the top of the steak, then turn it over to sear!.Www@FoodAQ@Com

I think you must be using too much heat!. Cast iron holds heat well so you shouldn't need such a high setting!. Turn down the heat and see if that helps next time!. Www@FoodAQ@Com

Olive Oil has a higher cooking temp so it should not smoke as soon!. You may want to lower your temp to start as well!. Hope that helps!.Www@FoodAQ@Com

it's the temp!. cast iron once hot will cook your steak on low!.Www@FoodAQ@Com
