Question: How do I get my chicken to be extra crispy like KFC !?
Answers:
Okay the guy that works at KFC is right!. You need to use a flour breading, dip in ice cold water, then flour, then water, then flour!. Drop in the oil and fry for exactly 15 at 350!.

Cooking it longer may make it crisper but it will also dry the chicken out something fierce!.

Here is my basic flour mixture:

8 cups flour
2 tbsp granulated garlic
2 tbsp onion powder
2 tbsp poutry seasoning
2 tbsp white pepper (use white pepper, the black looks funky other wise)
2 1/2 tbsp salt!.

Mix well!.

Another tip/secret is to sift the flour after about every 4-6 pieces of chicken if you are making a large batch!. If you don't you will get clumps that will fry up into little hard rock like clumps on the chicken!.

also don;t change your water as you make the chicken!. A little flour will come off of each piece of chicken making your water kind of thick!. This just adds to the crunch and is so very good!. Www@FoodAQ@Com

For the breading crush a few cups of Corn Flakes with the flour mix:

1 Cup Bisquick
1 Cup Crushed Corn Flakes
1 tsp each Pepper, Paprika, Garlic, Chicken Bullion(optional)

Soak the chicken overnight or for a few hours in buttermilk!. Drain off excess and shake in a plastic bag with flour mix!. Buttermilk will make for a moister, more tender chicken and add flavor!. Milk will do but it won't be as tender!.

Bake on non-stick aluminum foil or pan fry!. For frying let the breading sit for 5-10 minute to let it "set" before cooking!.Www@FoodAQ@Com

I work at KFC so I'll give you the scoop!. You will need a nice sized container full of cold water!. Before you bread your chicken, dip each piece in the cold water, bread it thoroughly and dip it in the cold water a second time (just a dip, you do not want to rinse off your breading) and bread the chicken once more!. GENUINE KFC SECRET RECIPE
2 cups flour
1/2 tsp salt
1/2 tsp thyme
1/2 tsp basil
1/2 tsp oregano
1 tbsp celery salt
1 tbsp black pepper
1 tbsp dry mustard
4 tbsp paprika
2 tsp garlic salt
1 tsp ground ginger
3 tbsp MSG (called Accent or Zeal in supermarkets, an important ingredient)

Mix all ingredients well in a large bowl!.
Although the ingredients and proportions used above are correct (use finely ground ingredients only, or grind them yourself), the cooking process is difficult to match as not many people have an oil pressure cooker handy, the following method approximates the outcome fairly well for home use!.
Dip chicken pieces in beaten eggs Then turn them over in regular bread crumbs (commercial) Finally plunge them in the flour-spices mixture (above) Heat oven to 350 degrees Place chicken in a tray and cover with foil (shiny side out) Cook 40 minutes!. Remove the foil then cook for another 40 minutes Baste lightly with oil 5 minutes before the end Let stand 5 minutes and serve!.

Well its easy than u think!.
When you get your plain chicken piece, fry it for a while in oil as u usually do!.
Then in a bowl add pepper, bread crumbs, a little drops of oil and mix well!.
Dip chicken in the bread crumb mix and fry it for a while in oil!.
Crispy KFC chicken is ready!!!

dip in plain flour

then dip in egg mixture (couple eggs and splash of milk)

then dip in flour mix with bread crumbs or cracker crumbs and mix in a little garlic and pepper!.

fry in veggie or canola oil!.

I saw on a cooking show that if you dip the chicken in flour then egg then into your seasoned flour it helps then breading stick easier then all you have to do is leave it in a little while longer to get it to be crispyerWww@FoodAQ@Com
