Question: I was going to make pasta, but changed my mind while shopping!.!.!. !?
I always make him pasta, but now I am going to make eggplant Parmesan!. I think it is kind of funny, because he is hesitant to try new foods, and this will seem strange to him!. I grew up on it!. if you knew him you would be giggling to!. So, my question is, i bought panko bread crumbs and have a deep fryer, I usually do it in a pan with normal bread crumbs, do you think it will be fine deep fried!? lol Www@FoodAQ@Com

yep, just make sure to put salt on the egg plant and let it sit for 30 minutes to get all of the water out, that way the breading won't fall off!.!.!.also let the breaded raw eggplants sit for about 5 minutes, that will keep the breading from falling off also!.

It should be pretty much the same really, except maybe a tad quicker and a tad oilier!. Eggplant is like a sponge and will suck up any fat or oil that comes near it!.

I slice my eggplant, lay it on a baking tray and splash with olive oil!. Then pop it in the oven to semi-roast!. That way it stays healthier and can absorb some of the tomato taste as well!.

I think it will be fin as long as you have a good breading and let it rest in the fridge for at least 1/2 hour so it adheres good to the eggplant!. Now with that said I would go with the healthier version of pan frying instead of deep frying!. Www@FoodAQ@Com
