Flounder is such a delicate flavor, virtually any other ingredients and you'll lose the taste entirely!.
I'd microwave in a covered glass dish for a few minutes with nothing but some butter or olive oil, perhaps a slight dash of lemon, and some sea salt!. Maybe a dash of ground pepper!. No more!.

BAKED FLOUNDER WITH CHEESE
2 lb!. flounder filets
2 tbsp!. fresh lemon juice
1/4 c!. light mayonnaise
2 tbsp!. finely chopped onion
1/4 c!. fresh Parmesan cheese
1/4 c!. butter
1/2 tsp!. seasoned salt
Place flounder on greased foil on cookie sheet!. Turn up edges all around so juices do not run over!. Pour lemon juice over fish!. Combine rest of ingredients, set aside!. Bake fish for 6 to 8 minutes in 450 degree oven until fish flakes with a fork!. Remove from oven!. Gently spread cheese mixture on top of fish!. Put back in oven and broil just until cheese has melted and topping is golden brown!.
CRISPY FLOUNDER FILLET
1 (1/4 lb!.) flounder
2 tsp!. reduced-calorie butter, melted, divided
1/2 tsp!. lemon juice
2 tbsp!. plus 1 1/2 tsp!. corn flake crumbs
1/2 tsp!. sesame seed
Dash of paprika
On microwavable plate, arrange flounder!. In small bowl, combine 1 teaspoon butter and the lemon juice; drizzle evenly over flounder!. In small bowl, combine remaining butter with corn flake crumbs and sesame seed, spoon over flounder and sprinkle with paprika!. Microwave on high for 2 minutes, rotating plate 1/2 turn halfway through cooking!. Makes 1 serving!.

Brian's Easy Stuffed Flounder --
"Easy to make and bake stuffed whole flounder!. This tastes great and looks beautiful!."
INGREDIENTS
1 whole flounder
1 cup butter, divided
1/2 cup chopped celery
1/2 cup chopped onion
3 cups chicken-flavored dry bread stuffing mix
1 (6 ounce) can lump crabmeat
1 (4 ounce) can small shrimp, liquid reserved
1 teaspoon Old Bay Seasoning TM, or to taste
1 teaspoon Cajun seasoning (optional)
DIRECTIONS
Preheat the oven to 300 degrees F (150 degrees C)!. Lay the fish down dark side up!. Make an incision next to the backbone on both sides, stopping before the head and tail!. Slip the knife in between the flesh and backbone and run the knife down the ribs on both sides of the backbone!.
Melt 1/2 cup of butter in a skillet over medium heat!. Saute the onion and celery in the butter until just tender!. Place the stuffing mix into a bowl, and stir the onion and celery into it along with the butter in the pan!. Mix in the crab and shrimp with their juices, adding a little more liquid, or more stuffing to get a good consistency!.
Melt the remaining butter, and brush some of it onto a cookie sheet!. Stuff the stuffing mixture into the pockets of the flounder, and place the stuffed fish on the cookie sheet!. Brush the outside of the fish with melted butter, and season with the Old Bay and if desired, Cajun seasoning!.
Bake for about 25 to 30 minutes in the preheated oven, or just until the flounder flakes easily with a fork!.

5 roma (plum) tomatoes
2 tablespoons extra virgin olive oil
1/2 Spanish onion, chopped
2 cloves garlic, chopped
1 pinch Italian seasoning
1/4 cup white wine
24 kalamata olives, pitted and chopped
4 tablespoons capers
1 teaspoon fresh lemon juice
6 leaves fresh basil, chopped
3 tablespoons freshly grated Parmesan cheese
1 pound flounder fillets
6 leaves fresh basil, torn
DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C)!.
Bring a saucepan of water to a boil!. Plunge tomatoes into the boiling water, and immediately remove to a medium bowl of ice water!. Drain, and remove skins!. Chop, and set aside!.
Heat olive oil in a skillet over medium heat, and saute onion until tender!. Stir in garlic and Italian seasoning!. Stir in tomatoes, and cook until tender!. Mix in wine, olives, capers, lemon juice, and 1/2 the basil!. Reduce heat, blend in Parmesan cheese, and cook until the mixture is reduced to a thick sauce, about 15 minutes!.
Place flounder in a shallow baking dish!. Cover with the sauce, and top with remaining basil leaves!.
Bake 12 minutes in the preheated oven, until fish is easily flaked with a fork

Grill 3-4 minutes longer or until fish flakes easily with a fork!.
