Ever heard of spinach and vinegar?!
At dinner at my fiance's parents' house, his mother prepared spinach and vinegar!. It was soooo good! How do you make it!? Is it just as simple as adding vinegar to cooked spinach!?Www@FoodAQ@Com
Answers:
Yeah just cook the spinach and then add a little vinegar and I use a dot of butter!. Only way I like to eat it!. You can use any kind of vinegar I have used white and apple ciderWww@FoodAQ@Com
Here's how I make it:
Take a few strips of bacon and cook in a skillet till browned!. Remove bacon from skillet, drain and crumble!. In the skillet with the bacon drippings, saute some diced onion until tender!. Add a few TBS of cidar vinegar (or balsamic or white vinegar) and a little sugar!. Cook till the sugar is dissolved!. Add a bag of spinach and cover pan!. Turn the heat off and wait 5-10 for the spinach to get wilted!. Sprinkle with the bacon and serve hot!.Www@FoodAQ@Com

2 tbs oil med heat in a deep pot or dutch oven add 2 bags baby spinach with stems trimmed, washed and dried!. stir constantly when wilted most of the way add 2 cloves diced garlic and 1/2 shallot minced or 2 tbs finely diced onion simmer for 2-3 min add 3 tbs red wine or cider vinegar toss and remove from heat
the spinach will release its juices and create a broth but remember as with any green the leaves will reduce in volume greatly when you apply heatWww@FoodAQ@Com
