Giving smoked salmon and smoked chickens as gifts?!
My husband and I are making smoked salmon and smoked chickens as gifts for my dad and two brothers, who are having a shared birthday party this weekend!. They all three "have everything" and so good smoked meats seem like the best gifts to give!. How should I go about packaging them!?
Chickens are easy to smoke and I know how I will do those!. Should I brine the salmon first for best flavor-longer shelf life!? Www@FoodAQ@Com

BTW BobbyW has it right!. It would not hurt to use a sweet brine on the salmon first as well!.
