With what you have there I would do some soft eggs or split eggs!.
Soft poach or fry several eggs so you can let the yolks flavour the rice when served!.
Split eggs!.
Separate eggs and fry the whites and allow to cool!. Slice into ?'' squares and stir into the rice long enough to reheat and add the yolks that have been broken!.Www@FoodAQ@Com

If I were in your shoes I'd go to the grocery store and purchase a bag of frozen mixed vegetables!. If you have a Walmart grocery store they have a great variety to choose from!. I have one in my freezer called " Birdseye Oriental stir fry" it comes with a brown sauce package that you add to the veggies and it gives it a great flavor!. The bag was under six dollars and would serve you many times!. It keeps you from having to buy many different packages!. One bag has all you need!.
If you live near an Asian grocery store they have some great buys there like some dried mushrooms they are rich in flavor!. Called "shitake" you soak them for about 20 minutes and they come to life!. They are very reasonable in price also!. If you have leftover rice you can fry it in oil with onions and green peppers and add scrambled egg to it!.!.!.and serve it by itself !. Keep my email Id and write to me I'll help you more!. italmama6060@yahoo!.com
How about nuts!.!.cashew, peanuts and almonds make great additions to rice and veggie dishes!. If you can get some that are raw and not salted they are best for cooking!. but if salted is all you can find that is OK too!. I love cooking been doing it for many years enjoy helping people with tight wallets!.!.!.take care!.

Fried rice!!! If you have oil, I'd recommend using that, but if not butter will do!.
Heat the oil in a frying pan (or butter!.) Add cooked rice to the pan (its better if the rice is 1 or 2 days old)!.!.!.!.Let it cook until it turns brown!. Fry some eggs in another pan and add them to the rice!. Put soy sauce in it, and more butter for flavor!. Yum yum!.Www@FoodAQ@Com
