PORK AND BROCCOLI CASSEROLE
INGREDIENTS!.!.!.!.!.!.!.!.!.!.!.!.!.!.
2 cups water
1 cup uncooked white rice
1 1/2 pounds leftover roast pork, cubed
2 (10!.75 ounce) cans condensed cream of celery soup
1/2 cup mayonnaise
1/2 teaspoon ground black pepper
1/2 teaspoon curry powder
1 (10 ounce) package frozen broccoli, thawed
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C)!. Place rice and water in a saucepan over medium-high heat and bring to a boil!. Once the water is boiling, reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender!.
In a large bowl, mix together the cubed pork, rice and broccoli!. Stir in the cream of celery soup and mayonnaise, then season with pepper and curry powder!. Transfer to a 9x13 inch baking dish, and cover with aluminum foil!.
Bake for 45 to 50 minutes in the preheated oven, until evenly heated through!. Remove the aluminum foil for the last 5 minutes in the oven!.

1 pound boneless leftover pork loin, cut into 3/4-inch cubes
2 cups julienned zucchini
1/2 pound fresh mushrooms, sliced
1 medium onion, cut into wedges
1 cup julienned green pepper
1 tablespoon cornstarch
3 tablespoons light soy sauce
1 tablespoon cold water
1/4 teaspoon garlic powder
Hot cooked rice
DIRECTIONS
In a skillet or wok coated with nonstick cooking spray, stir-fry the pork until no longer pink, about 4 minutes!. Add zucchini, mushrooms, onion and green pepper; stir-fry for 3 minutes or until crisp-tender!.
In a small bowl, combine cornstarch, soy sauce, water and garlic powder until smooth!. Add to the skillet!. Bring to a boil; cook and stir for 1-2 minutes or until thickened and bubbly!. Serve over rice!.
LEFTOVER PORK STEW

2 tablespoons butter or oil
1 1/2 pounds boneless pork, cut into 1/2-inch cubes
2 cloves garlic, minced
1 medium onion, chopped
3 cups chicken broth
1/2 teaspoon salt
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon rubbed sage
1 bay leaf
3 cups frozen, cubed butternut squash
2 MacIntosh apples, cored and cubed ( give the stew a hint of sweetness)
2 large potatoes, peeled and cubed (optional)
2 cups carrots, peeled and diced (optional)
DIRECTIONS
Melt the butter in a large skillet over medium-high heat!. Add the pork and cook until lightly browned on all sides!. Stir in the garlic and onion, and continue to cook until the onion has softened, and the pork is firm, and no longer pink, about 5 minutes!.
Place the pork and onions into a large saucepan!. Pour in the chicken broth, and season with salt, rosemary, sage, and the bay leaf!. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 20 minutes!.
Stir in the butternut squash, apples, potatoes, and carrots!. Return to a simmer, then cook, uncovered until the squash and apples are tender, about 20 minutes!. Remove the bay leaf and serve!.

ingredientss
6 hoagie rolls, split
1/2 cup pizza sauce (divided between the 6)
18oz pork loin shredded or sliced (3 0z in each sandwich)
1/2 cup Italian dressing (drizzle between the 6)
1/2 cup mozzarella cheese, shredded (sprinkled on the six)
Directions
Preheat oven to 350°F!. Place split hoagie rolls, split side up, onto a cookie sheet!. Spread pizza sauce on the bottom half of each hoagie roll!. Top with pork and then drizzle pork with Italian dressing!. Sprinkle cheese over top of dressing!. Bake for 5-10 minutes or until cheese is melted and tops of rolls are lightly toasted!. Place bun tops on bottoms and serve!.

3 eggs
4 green onions (scallions), cut up
Soy sauce to your taste
Any leftover pork , diced
Day before or early in the day cook the rice and let it cool!. In heavy skillet, brown diced bacon and remove bacon from pan, reduce heat!. Beat the eggs and pour them in hot bacon drippings!. Add the cooked rice and onions!. Mix together!. Add bacon and any leftover diced meat!. Add soy sauce until you get desired color!. Stir well and cook on low heat for 15 minutes!. yummy!!

Make a veg stock 3/4 pint and add 2 large teaspoons Dijon Mustard and same of apple sauce
Cut up the pork to small cubes and put in casserole dish
Put in Cubed carrot, swede, red pepper and onion and potato!.
Pour over the stock!. Cover and put into the oven at 200c for 45 min then take cover off for anothe 45 minWww@FoodAQ@Com
