Substitute for OIL-PACKED sun-dried tomatoes?!
I have a pasta recipe calling for oil-packed sun-dried tomatoes!. I have just regular sun-dried tomatoes that have not been oil-packed, and I think I might have fresh tomato as well!. I am wondering how I should prepare either the dry sun-dried tomatoes or the fresh tomato to make it best match an oil-packed sun-dried tomato!. Wow, that's a lot of tomatoes! Thanks!!Www@FoodAQ@Com

Soak the sun dried tomatoes in a little water until they are somewhat softened!. Drain well and pat dry!. Put in bowl with small amt of olive oil!.
Toss to coat!. Let stand for 30 minutes!. Drain oil from tomatoes!.

We have always oil packed the sun dried tomatoes after purchasing them from the store!. Layer them in a glass jar!. Add coarsely chopped garlic and fresh italian parsley leaves throughout the layers of tomatoes!. Fill the jar with olive oil!. Seal with lid and refrigerate!. I use pumice oilWww@FoodAQ@Com

just take some olive oil, and mix it in with the sun-dried tomatoes!. maybe a flavoured olive oil if you can!. Www@FoodAQ@Com
