It was this little restaurant in Savannah, Georgia and there was a buffet of Southern fried chicken, Baked chicken, Collard greens, Mashed potatoes, Yams, Lima beans, Black eye peas, Mac and cheese, Green Beans, Rice and biscuits!.

I found out a few months later that it was Paula Deen's restaurant, called Lady & Sons!.

It had to have been my grandmothers catfish fillets!.!.!.!.!.!.!.

Cornmeal-Crusted Catfish

Ingredients
3 slices bacon
1/3 cup yellow cornmeal
2 teaspoons salt-free Cajun seasoning
1/2 teaspoon salt
4 (6-ounce) catfish fillets


Preparation
Cook bacon in a large nonstick skillet over medium heat until crisp!. Remove bacon from pan; reserve 2 teaspoons drippings in pan!. Crumble bacon; reserve for another use!.
Combine cornmeal, seasoning, and salt in a shallow dish!. Dredge fillets in cornmeal mixture, shaking off excess!.

Heat reserved drippings in pan over medium-high heat!. Add fillets; cook 5 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness!.

a co-worker of mine at the YMCA in Wilmington NC made fried chicken gizzards, pork buck, ham hocks and collard greens, and black-eyed peas for my Christmas party one year!. Then she brought out the piece de resistance--red velvet cake!.!.!.mmmmm!.!.!.!.!.I asked her if she'd like to adopt me the food was so delicious!Www@FoodAQ@Com

We went to this buffet called Manna's!.!. I had red bean salad, crab meat salad, beans and rice, chicken stuffing, honey glazed ham, corn & okra, collard greens, corned beef, and some deviled eggs! It was great!.Www@FoodAQ@Com
