Sauce for garlic chicken?!


Question: Sauce for garlic chicken!?
Can anyone give me a recipe for a sauce for the following dish!.i am doing spring onion bed of mash with a breast of garlic chicken on top,i amlooking for a sauce to drizzle over preferably containing button mushrooms but nothing containing alcohol!.also can anybody suggest a starter to compliment this meal!.not soup or salad thanks in advance!.xWww@FoodAQ@Com

Hi Fantasiz, let's go with your starter, seeming your theme is chicken think down those lines a packet of fresh wingetts you can pick up for a couple of bucks, The rest of the ingredients, you sound like you would have in your pantry!.
Tesdpoon Paprika (hot)
Pinch tumeric
salt and pepper
1 & 1/2 cup of unseasoned bread crumbs ( I do my own)!.
2 table spoons of parmesan cheese!.
1 teaspoon garlic powder!.
1/4 teaspoon dry oregano (just for the hell of it, not a requirement)

Add all the dry ingrediants to a large zip lock bag, shake to mix well, add your chicken wingetts and shake coat well!. or the other way is dip into an egg wash then coat!. place on tray, into a preheated oven 350 375 when golden one side turn them over!. when cooked serve with a nice sweet chilli dipping sauce, or something down that line, use you imagination!.

Now your gravy, you do not want your sauce to take away from your main attraction or over power the chicken, so you have to keep it nutural, I would cheat here!. once your chicken is cooked, drain off excess oil or fat, At a medium to high heat, some sliced mushrooms saute not to much, nyou want to be able to taste the mushroom, and have some bite!. I usually use three types of mushroom for this, take out of pan put I side, deglaze pan using a cup or so of chicken stock, scrapping up those yummies from the bottom of the pan!. I find if I add a 1/4 to half teaspoon of corn starch and really give it a good wisk it will do the thickenning trick as it starts to thicken add the mushrooms back to the sauce/gravy give them a further couple of minutes and serve!. Of course if the sauce thickens too much add some more chicken stock and wisk it in well!.

Have a glass of wine for me while your doing this!. My wife does, so do I!. A nice Merlot, or a Pinot!.

I would just take some cream,season it bring to a simmer & add finely chopped garlic & favourite herb!.!.!.basil/oregano maybe!.
Add the mushrooms last of all so they inpart their flavour to the sauce!.

i would suggest you buy a good meaty pork pate with the above main course!.
I would serve it with a side dish of butter & warm fresh bread or something nice heated in the oven!.!.!.let them dig in ;) Www@FoodAQ@Com
