Question: Looking for a twist on steak!.!.!.!?
My fiance is a real meat and potatoes kind of guy, but whenever he cooks, he uses the same tenderizing marinade in a bag, broils the steaks, and serves them with mashed potatoes!. I'm making dinner tonight, and I want to cater to his "meat and potato" kind of diet, but I want to do something a little different!. My culinary skills are!.!.!. moderate and growing, so something a little challenging would be ok, but something really complicated would probably get burned in the process!. When I want to "wow" someone with a great steak dinner I make "Steak au Poivre"!. Here is the recipe:

4 tenderloin steaks, 6 to 8 ounces each and no more than 1 1/2 inches thick

Note at above steak: -> I've made this recipe with all sorts of good cuts of steak and it works well!.

Salt
2 tablespoons whole peppercorns
1 tablespoon unsalted butter
1 teaspoon olive oil
1/3 cup Cognac, plus 1 teaspoon
1 cup heavy cream


Remove the steaks from the refrigerator for at least 30 minutes and up to 1 hour prior to cooking!.

Sprinkle all sides with salt!.

Coarsely crush the peppercorns with a mortar and pestle, the bottom of a cast iron skillet, or using a mallet and pie pan!.

Spread the peppercorns evenly onto a plate!.

Press the fillets, on both sides, into the pepper until it coats the surface!.

Set aside!.

In a medium skillet over medium heat, melt the butter and olive oil!.

As soon as the butter and oil begin to turn golden and smoke, gently place the steaks in the pan!.

For medium-rare, cook for 4 minutes on each side!.

Once done, remove the steaks to a plate, tent with foil and set aside!.

Pour off the excess fat but do not wipe or scrape the pan clean!.

Off of the heat, add 1/3 cup Cognac to the pan and carefully ignite the alcohol with a long match or firestick!.

Gently shake pan until the flames die!.

Return the pan to medium heat and add the cream!.

Bring the mixture to a boil and whisk until the sauce coats the back of a spoon, approximately 5 to 6 minutes!.

Add the teaspoon of Cognac and season, to taste, with salt!.

Add the steaks back to the pan, spoon the sauce over, and serve!.

Serve with steamed broccoli and mash pots or baked scallop pots with creamed spinach!.

SENSATIONAL STEAK & TOMATOES

Ingredients

* 1 1/2 lbs top round beef or sirloin steaks, about 1-inch thick
* 1/4 cup salad oil
* 1 cup water
* 1 medium onion, cut into 1/4-inch slices
* 1/2 teaspoon garlic salt
* 1/4 teaspoon ginger
* 2 tablespoons cornstarch
* 2-3 teaspoons sugar
* 4 tablespoons soy sauce
* 2 medium tomatoes

Directions

1!. Trim fat from meat!.
2!. Cut meat into strips 2x1x1/4 inch!.
3!. Heat oil in large skillet!.
4!. Add meat, cook until brown ob all sides!.
5!. Stir in water, onion, garlic salt & ginger!.
6!. Heat to boiling, reduce heat!.
7!. Cover & simmer 12-15 minutes!.
8!. While simmering, cook enough Instant Rice as directed on package for 4 servings!.
9!. Blend cornstarch, sugar & soy sauce, stir into meat mixture!.
10!. Cook, stirring constantly, until mixture thickens & boils!.
11!. Boil & stir 1 minute
12!. Cut tomatoes into 1/8's, Place on meat mixture!.
13!. Cover & cook over low heat about 3 minutes!.
14!. Serve over Rice!.

You can pan fry a steak and it will turn out great!. I would top the steak off with something nice!.

One pretty rich sauce I use includes butter and Merlot wine!.

Start off by lightly salting and peppering both sides of the steak!. I love garlic so I also use garlic powder when I do this!. After pan frying the steak to your preference , use a rubber spatula and scrape up the bits of cooked meat and juices left behind!.

Pour one cup of Merlot wine and allow it to simmer until it's cooked down a bit!. Then add a half stick of butter to the Merlot and some more garlic and salt!.

Once the sauce is cooked down until sorta thick you can use it to top off his steak!.

make a pork roast and instead of potato's, look in the freezer section for bread dumplings!. To make gravy save the drippings and McCormick has gravy mix in those little red packets!. Coat the pork roast with coconut milk before cooking and baste some on it while it cooks to keep it moist!. Get an Acorn squash, that's the green one with a orange spot!. Cut that in half and scope out seeds!. Put it in a big enough casserole dish and put water in the dish so theirs about a 1/2 inch in it!. then cover it and microwave it until the skin can easily be punctured!. The cut side of the squash should face down!. Then put some butter,brown sugar,and dried cranberries in each half after its cooked and let that all melt!. Then sprinkle the squash with a little nutmeg!. Now you got meat and 2 sides!. The squash is in season now also, so it should be cheap!.Www@FoodAQ@Com

If you have a good peace of meat, you should not have to marinate the steak!.

This is what I would do:

Season two steak with salt & pepper!.

Over medium high heat, heat a frying pan with olive oil and butter!.

Add the steaks to the pan, searing on both sides for 3 minutes!.

Take the steak out of the pan and put on cookie sheet in over to cook to desired temp, I like rare but thats just my opinion!.

In the frying pan, add 2 cups of quartered white mushrooms, cooking 8 minutes!. Then add 1/2 cup of red wine (be careful when adding to the pan), 1 tbs of ketchup and 1 tbs of wostershire sauce!. Add salt and pepper to taste!.

Reduce this sauce and place over cooked steaks!. The sauce is great and serve with mashed potatoes (add horseradish for a real kick) and a vegetable!.

My husband and I both love steak and potatoes!. I usually buy sirloin from the butcher and just fry it!. I love the taste of the meat, not the marinades!. Marinades usually work well with a lesser cut of beef, it helps to tenderize it and give it little extra flavor!. For potatoes we usually just nuke the potatoes for about 6-8 minutes and then stick a fork in them and cook them a littler longer if they feel hard!. It's pretty simple but it's really delicious!. 1!. a good quality steak--center cut is best for this!.!.

2!. wrap a slice of your favorite bacon around the steak and hold in place with a toothpick

3!. salt and pepper to taste and broil or grill to just before your desired doneness!.

4!. top with bleu cheese or gorgonzola cheese and finish cooking

5!. serve with carmelized onions and mushrooms sauteed in red wine, steamed veggies, and potatoes fixed his favorite way (baked, mashed, boiled)

Do you have a pre-seasoned iron skillet!? If you guys are steak lovers I suggest getting one!.

Montreal Steak rub is the best!. Rub it into your Ribeye and fry it in an iron skillet!. I suggest using non salted butter!. 12 minutes on both sides on medium-high heat!.

With Mash, I suggest using the yellow potatoes!. When mashing put in some non salted butter, and heavy whipping cream!. It would make the mash very smooth!.

I also suggest sauteing some asparagas with olive oil!. Put some lemon juice and soy sauce in the pan as well!.

this would make a great meal!.

Teriyaki steak is a great way to add a new twist!. Buy a premade sauce or make your own by adding soy sauce, honey (or sugar), onion powder, garlic powder, and fresh or powdered ginger to taste in a large bowl!. Marinate the steak for at least 1 hour!.

After broiling, top with a ring of pineapple that has been sauteed!. You can save a pan by topping the steak with the pineapple the last 1-2 minutes while broiling!.

Serve this with brown rice cooked in chicken or vegetable broth (adds more flavor), and an assortment of fresh veggies!. You can sautee them with slivered almonds, peanut oil, and garlic to add an easy, flavorful twist to boring veggies!.


Another option is to buy a flank steak and lay it out!. Sandwich it between plastic wrap and pound until it is an even consistency (you don't need a meat hammer!.!.!.I use a heavy pot or pan)!. Once this is done, remove the top layer of plastic wrap!. Season it with onion powder, garlic powder, salt, and pepper on both sides!.For an easy filling, you can try adding a layer of sauteed onions and mushrooms, which go great with meat!. Tightly and evenly roll the meat over the filling, like you'd do with a jelly roll!. Secure with butcher twine (a white string that won't catch on fire), three skewers that were soaked in water, or completely ignore the "securing" part and just lay the rolled steak down on the open "seam!."

Place on a shallow sided pan lined with aluminum foil and broil for 12 minutes of so (until it begins to brown)!. I have a perfect solution!.!.!.Stubbs Marinade!.
My fiance and I barbeque our steaks!. Grilling the steaks gives them a tender inside with a delicious barbecue taste on the outside!. If you do not have a grill, the broiler should be fine since you have experience cooking steaks that way!.
We marinade the steaks in foil with Stubbs for an hour before grilling!. I absolutely love the Texas Steakhouse marinade but the Beef marinade is equally delicious!.
Another option without having to marinade before hand is to put the steaks directly on the grill (or broiler) and pour marinade over them and again when turning the steaks!.
The Stubbs marinade is also delicious for marinating vegetables!. We have used the Beef Stubbs in foil with asparagus on the grill and mmmm!
A great side dish for two perfect steaks!.!.!.perogies!.
You can buy them fresh or frozen in most supermarkets!. They are easy to cook!. If frozen, defrost a plate full in the microwave for 60 seconds!. Warm a pan with a couple tablespoons of butter, cook on medium, turning at least once until done!.

What I like to do and have done in the past in the restaurant is take what is a blade tenderizer!.You can find this a www!.topchefcookware!.com it is called the Deni Meat Tenderizer!. This is a spring loaded mechanism with 48 tiny blades that you push done into the meat!. This will help any marinades or seasonings to get into the meat and help infuse the flavors!.But for the time being you can use a fork it just does not penetrate and break down the tissue as well!.
Depending on the cut of meat will also determine how long and strong you leave and make the marinade!.Just remember the more the piece of meat moved when it was alive the more it would need to marinate
If you like say a New york strip or a Rib-eye steak use your blade tenderizer or fork and pierce the meat all over then I you need to take acid base liquid like Worcestershire Sauce,fresh garlic 2 cloves, salt (preferably sea salt), fresh ground pepper,2Tbsp of onion flakes,
1/4 tsp of paprika and red pepper, and about 1/8 cup of vegetable oil!.and let it marinade for at least 2 to 3 hours!.If you don't have a grill to cook it on outside use a frying pan or a Cast Iron skillet and put it on top of the stove and get it hot!. Pull the steak out of the marinade and allow some of ti to run off then put it into the skillet and sear the steak off until a caramel color then flip and do the other side!. Do not push down on the steak allow it to seal in the juices!. Then after both side are seared off finish in a oven at 350 degrees until about desired temperature pull out of oven and let it rest about 10 minutes now remember it will carry on cooking while resting so pull it out of the oven early enough!.
Take the mashed potatoes he likes so well one step further with a little sour cream,butter,cheese and bacon bits,salt and pepper!. Make him some "Slamming Mashed Potatoes"
