Question: ~What's a Cheep, Easy Spanish dish that I can make for school!?
Our Spanish class is having a fiesta on Friday and we all need to make a dish (we can't just buy salsa or chips and bring it in)!. Its 20 points to bring in food!. The food has to be Spanish so, it can't be like chocolate-chip cookies or something!. I don't want to go out and buy like 20 ingredients for a dish so, I'd like it to be cheep, easy, and quick!. It doesn't matter if it has to be refrigerated because I can keep it in the Foreign Language Office's refrigerator at school!. It needs to be enough for 20-25 people too!. I was thinking of making Cuban black beans and rice but, I know a few other people making rice too so I would like to make something different!. Make chicken enchiladas!. I have been making this forever!.

You will need:
10 flour tortillas
1 rotisserie chicken
1 package of cream cheese
1 jar of your favorite salsa
1 small box of Velveeta
1 8 ounce package of shredded cheese

13x9 oven safe dish
1 large stove top pan

1st- take all the meat off chicken and discard skin, fat, and bone

Place in pan on stove, over med heat combine chicken, 1/2 jar of salsa, 1/2 package of cream cheese, and Velveeta!. If it seems to dry for your tastes add more cream cheese and/ or salsa!.

When combined throughly equally fill flour tortillas with chicken mixture!.

Top with lots of shredded cheese and bake in oven until cheese is nice and gooey!. You can serve with sour cream, hot sauce, extra salsa, or guacamole!.

Just thought I'd let you know, "Spanish" means people from Spain!. I'm Cuban, not Spanish therefore I eat Cuban food, not "Spanish" food!. Anyway, black beans and rice sound good to me!. If not, try Picadillo!. It's the easiest thing to make!. It's ground beef in sauce!.!.!.almost like sloppy joes but you can eat it with rice!. Check it out!. Www@FoodAQ@Com

I don't know any Spanish dishes but there's always Mexican hot chocolate!. The easiest way to make it is to buy bricks of Mexican chocolate (found at most grocery stores) the brand is from Nestle called "Abuelita" Boil it in milk until it melts!. This isn't the correct way to make this- but it is the easiest and still tastes good!.Www@FoodAQ@Com

Make enchiladas!. You can buy a packet of seasoning and the instructions are on the back!. You will find that seasoning mix in the aisle where all the gravy mixes are!. You will need ground beef, shredded cheese, corn tortillas and a couple of cans of enchilada sauce!. It will probably cost around $10 to make enough for 20 or so people!. Www@FoodAQ@Com

You say Spanish but then you mention Cuban also!.!.!. do you mean from a Spanish-speaking area!?

For a Spanish dish I would recommend paella (filling) or gazpacho and ceviche (light)!.!.!. both easy, quick and cheap

It sounds to me like the dish you need to bring doesn't necessarrily have to be Spanish, but from a Spanish speaking country!.

If so, make salsa!. I'll let you in on a little trick: just buy a couple of cans of Rotel (original or spicy), empty the contents of both cans into a blender, add a little garlic salt, and blend until smooth!. This makes GREAT salsa that tastes homemade!.

Edit: I served this salsa to my mother-in-law and my father-in-law, who are both Mexican, and they thought I made it from scratch!Www@FoodAQ@Com

Taco Boats!.

Get some WonTon Wraps from your local grocery store!. They usually hang in the produce isle near the Tofu!. They come 60 to a package!.

I can make about 48-50 of these with two pounds of ground beef!.

Brown your ground beef ( 1-2 pounds) with chopped sweet onion (large or small)!. Drain and add the dry Ranch Dressing mix (1 pkg!. for 1 lb!. 2 for 2 lbs!.)!. Stir in well!.

While your meat is cooking take the Wonton Wraps and place them individually in a muffin tin to bake and form a small bowl!. Transfer them to a cookie sheet after you finish baking them!.

Spoon in your meat mixture to each bowl and add grated cheddar cheese to the top!. Place them back in the oven to melt the cheese slightly!.

They are fun to make and more fun to eat!. And believe me they will disappear so don't think you can make to many!

My son just took these to his Spanish Class and they were gone almost as soon as he got them in the classroom!.


He has also taken Fried Plantains before and they were good for the class to munch on!.

Fried Green Plantains

1 or more green plantains as desired
Garlic salt, to taste
2 c!. water
1 c!. vegetable oil

Peel of plantain by cutting of two ends!. Make a slit along one side of plantain start peeling off sideways!. Slice plantain diagonally 1/2 inch thick!. Pour 2 cups water in a pan add garlic salt!. Soak sliced plantain in garlic water for 15 minutes or more!. Pour oil in a frying pan!. Drain sliced plantain and fry in medium heat until slightly tender!.

Remove from frying pan!. Using the skin of the plantain or a piece of paper towel etc!. Smash semi-cooked plantain!. Soak again in garlic water for 10 minutes!. Drain and fry again in medium high heat until crispy!.

NOTE: This is a continuous process as you are cooking more than one sliced green plantain!.Www@FoodAQ@Com

Super thin sliced steaks grilled with lime, salt, and green onions!. Corn tortillas warmed!. Home made lazy salsa; diced tomatoes, onions, cilantro, chilli's, avocado, salt, and fresh lime juice!. Serve with shredded cheese and sour cream!. Meat costs about 8-10 dollars!. Ingredients for salsa costs about 5 or 6 dollars because you don't need lots of vegi's to make lots of salsa!. Get a block of cheese for about1!.50 and shred it yourself!. Sour cream is about a dollar!. People will love it and it is authentic mexican food!.Www@FoodAQ@Com

Chicken and Rice

Prep Time: 10 minutes
Cook Time: 30 minutes
Ingredients:
1 small chicken (or 10 pieces chicken), cut into small pieces*
1 ripe tomato, diced
1 yellow onion, chopped
1 red pepper, sliced into long strips
2-3 cups medium grain rice
4 cups chicken stock
1/2 tsp turmeric (optional - for yellow coloring)
4-5 Tbsp extra virgin Spanish olive oil
Preparation:
* Legs and thighs work well for this recipe because they are small and easy to stir!.

This chicken and rice recipe makes 4-6 servings!.

In a large frying pan or skillet, saute tomato, onion and pepper in olive oil!. When onion is translucent, add pieces of chicken and cook for 5-8 minutes!.

Add rice to pan, stirring to coat all the grains with the oil!. Add chicken broth and turmeric, if desired!. Bring to a boil, then reduce heat and simmer uncovered until the rice is cooked – approximately 20 minutes!.

Tostonis are ok cold but they are a fried food so you may need help with it!. I squish the slices with a plate with the slices between plastic wrap!. You first cut the plantains into about 1/2"-3/4" slices fry them, then squish them and fry them again!. Figure about five or six plantains for 20 people!. Buy green plantains!. The yellow/black ones are too sweet for frying!. If you can warm them up they would be better!.
