Cooking with venison...brand new at this?!
I have some ground venison from a deer that my brother got last year!. It has been in a very very cold freezer since, so I know it is safe to eat!. I have never cooked with venison and rarely eat it!.!.!.this is a "money's tight" and "use it up" kind of situation!. I was thinking of using it as a substitute for beef in hamburger helper!. Is there anything I should know about the differences between the two meats, and how to offset them!? I would really just like this to pass for hamburger because I'm not a fan of "slightly different"!. WAY different I can handle!.!.!.I don't have any preconceived expectations!. But "slightly different" just reads "familiar but somehow wrong!."

it has NO fat, so when browning for a dish use a little oil in the pan!.!.!.it is easily substituted in chili, casseroles, and the like w/hardly any difference other than being a little dryer than beef burger!.!.!.adding a little salt, garlic, or onion in the browning process also helps w/dryness & flavorWww@FoodAQ@Com
Venison can have a strong gamey flavor to it!. I am not certain it would work in hamburger helper!. I would brown the meat and give a taste!. Depending on the hamburger helper you are using, you could add additional seasonings to off-set the strong venison flavor!. If a tomato base product for dinner tonight, that would help, I am not certain it would work in cheeseburger macaroni!.

It works fine with hamburger helper!. After browning it rinse it in a sieve with hot water!. This removes any "tallow taste" left behind!.
If making burgers, grill it so the grease drips off!. Some folks think venison burger is very dry but it is not!. Some is actually mixed with beef suet!.
Chili is very good with venison!.
Biscuits and gravy also!.

The smell turns my stomach!. Toss it out!. It has been in the freezer a year!? Toss it out!.!.!.ground meat does not last as long as other meats!. If it was a venison steak I would say marinate it in Italian dressing and it makes it taste better!. Www@FoodAQ@Com
My husband is a hunter and does most of our cooking!. I never ate deer meat until I met him and my mom is not a big fan either!. Like you it became a "money " thing and I had to eat it or starve!. He says the key to not getting the gamey flavor is to hang the deer for as long as you can!. For the larger roasts he has soaked them in red wine of some sort to remove the gamey flavor!. She loves his roasts now!.
We have used the "hamburger" meat for hamburger helper and can tell no difference except it is dry!. May need the oil mentioned in the oteher answer!. Hope you enjoy the meat, it really isn't bad if you aren't expecting moist and strong!.Www@FoodAQ@Com
