Cottage cheese sausages?!


Question: Cottage cheese sausages!?
does anyone have a recipe for cottage cheese sausages!? I used to make them and can no longer find my recipe for them!. they are vegetarian and I remember they have cottage cheese, peanut butter, onion, and eggs!. they are rolled in breadcrumbs and fried!.
If anyone has a recipe I would really appreciate it

How about cottage cheese pancakes and vegetarian sausages instead!?

COTTAGE CHEESE PANCAKES

Makes 10 medium pancakes

* 4 eggs
* 1/3 cup skim milk
* 16 ounces cottage cheese (non-fat or low-fat work great)
* 1 cup flour
* 1 teaspoon salt
* 1 teaspoon baking powder
* 1 teaspoon cinnamon, nutmeg, or cardamom (optional but delicious)

* 1 teaspoon (or more) butter

Place eggs, milk and cottage cheese in a blender and whir until frothy!. Add the remaining ingredients and whir again until just mixed!. (The batter can be made ahead to this point!. Leave it at room temperature for up to a couple of hours, otherwise refrigerate, including overnight!.)

Fill a 1/3 cup measure with batter, pour into skillet!. Let pancake cook, untouched, until small bubbles form in middle about 2 minutes!. With a flat spatula, turn the pancake over and brown lightly, about 1 minute!. Serve immediately with butter and syrup or fresh fruit, applesauce, sour cream or even deliciously plain


VEGETARIAN SAUSAGE LINKS

1 sm!. onion, minced
3 tbsp!. olive oil
3 tbsp!. Parmesan cheese
3 cloves minced garlic
2 c!. cold cooked rice
1 c!. cooked kidney beans
1/4 c!. egg substitute
1 tsp!. dried thyme
1 tsp!. dried oregano
1 tsp!. dried sage
1/4 tsp!. dried cilantro
1/2 c!. dry bread crumbs
1 c!. warm tomato puree

In a large nonstick frying pan, saute the onions in 1 tablespoons of the oil until clear!. Add the cheese and garlic!. Saute until garlic is clear!.

In a large bowl combine rice, beans, egg substitute, thyme, oregano, cilantro and sage!. Stir in the onion mixture!. Transfer to food processor!. Process until mixture is a solid mass, but NOT pureed!. Just a few seconds!. Divide into 8 parts!. Form each part into a sausage shape!. Roll in the bread crumbs!.

Coat a baking sheet with non-stick spray!. Set the sausages on the sheet and brush with remaining oil!. Broil until mottled brown on all sides, about 5 minutes!. Serve with tomato puree!. Yield 4 servings!.Www@FoodAQ@Com
