Cook with mushrooms for a lovely pie filling or root veggies for a wonderful casserole!. Just thicken with gravy granules when the meat is cooked!.!.!.!.!.My Partner loves his braising steak done this way!.Www@FoodAQ@Com
Long and slow is the way to go, 120C for 3 hours would be ideal!.
To flavour it, most people brown it first before putting it in!. However, if you mix honey and mustard and marinate it for a day or more, the marinade has a combination of chemicals that improve the browning vastly (something called the maillard reaction, do a google)!.
You want some strong flavours to complement the flavour of the braising liquid!. I'd say use red wine and add garlic (plenty of it too, leave the cloves whole and put 5-10 in), nutmeg, a bayleaf and some thyme and most important of all, plenty of white pepper!. White pepper magnifies flavours (black pepper 'contains' them)
Another good thing to do with braising steak is to make a curry!. You just braise it with spices, a tsp each of coriander, cumin, chilli powder, and garam masala, 5-10 whole cloves of garlic as above, some ginger, cinnamon, fenugreek, a couple of cloves!. Again braise it in red wine!.
Both the above are best served with rice, it soaks up the juices!.
Another spicy option is to make fajitas; fajitas are usually made with beef skirt, but quite often skirt is called braising steak!. They're fairly similar!. Braise as above, add chilli powder, a tsp of oregano, a tsp of cumin and coriander, some tomato puree and either smoked paprika or liquid smoke (which is the better of the two)!. You would serve the meat with some spicy salsa, grated cheese, sour cream or creme fraiche and tortilla wraps!. Guacamole too if you want but that's optional!.
Enjoy it! It's a great thing to eat at this time of year!.Www@FoodAQ@Com
