What causes a pumpkin pie not to set and me mushy inside?!

That's a big problem with fresh pumpkin recipes!. Canned pumpkin is called for in most recipes out there!. Fresh is great but if you are following a canned pumpkin recipe, it will be looser unless you boil it down to a very thick consistencyWww@FoodAQ@Com

I just made a GREAT pie!. I approximated the ingredients and it was really easy!.
3/4 can of pure pumpkin
1!.5 packages softened cream cheese
1 tsp!. nutmeg
Dash cinnamon
1/2 cup powdered sugar
3 eggs (blended in one at a time)
Pour into a graham cracker crust and bake on 350 for 55 mins!.
Turn off oven and leave the pie in there for 20 -30 mins, THEN remove!.
(I put it in a shallow water bath too, like making a cheesecake!.)Www@FoodAQ@Com

It probably has to do with the eggs!. Pumkin pie is actually like a pumpkin custard and it needs the firmness of the cooked eggs to set properly!. That and the condensed milk!.

It's not done!. Put it back in the oven!. To test doneness, stick a table knife in it!. If it comes out clean, it's done!. Www@FoodAQ@Com
It may be if you use fresh pumpkin!. I use canned pumpkin and the recipe that is on the can and it always comes out good!.Www@FoodAQ@Com
