Omelets that are light and fluffy are more appetizing and made of the exact same ingredients that flat omelets are!. With one very important difference, you need to beat the egg yolks and egg whites separately!.

To make a fluffy omelet for an average family use 6 eggs!. beat the yolks thoroughly [Mix for about 30-40 seconds!. The trick is to get as much air into the mix as possible!.] and add 6 tablespoons of milk!. If preferred, the milk may be heated this will cook the yolks slightly when it is added and give the omelet a smoother consistency!.

Fold the yolk mixture gradually into the beaten egg whites and add the salt!. Pre heat your omelet pan with 1 tablespoon of butter or olive oil!. Pour the egg mixture into the pan and cover!. When the omelet is done, crease it through the center, fold it over with a spatula, and slide it onto a plate without attempting to lift it from the pan!.

For a vegetable omelet, add any combination of cooked vegetables such as onions, mushrooms, or asparagus to the egg mixture before it is cooked or vegetable can be spread over half of the cooked omelet before it is folded and turned on to the plate!.

* salt and pepper

Heat an 8-inch skillet over medium heat until your hands feel warm when held about 2-inches above the surface; add in butter and swirl to coat the bottom of the pan evenly!.

Using a heat-proof spatula, push eggs from edge towards the center; tilt pan to let egg fill the spaces!.

I have 2 ways to make a fluffy omelet

Idea #1:
Beat the eggs (by hand is fine) in a small bowl!. Add the rest of your ingredients!.
Spray a small fry pan with non-stick spray!. Heat on medium high until a drop of water would sizzle!. Pour egg mixture into pan and cover!. Cook until set!. (Covering the pan makes this light and fluffy!.)
Takes about 3-5 MInutes

Idea #2
OMELET IN A BAGGIE
Ingredients
2-3 eggs
bacon bits, cheese, veggies, or other omelet goodies
pepper and salt to taste

Directions
1!. Bring a large pan of water to a roiling boil!.
2!. Whisk all the ingredients together with a fork!. Pour the omelet mixture into a sandwich-sized Ziploc?-type plastic bag!. Make sure the seal is tight!.
3!. Carefully place the plastic bag in the boiling water!. Let it boil for 14 minutes or until the omelet is nearly set!. If you overcook it, it will be rubbery!. Cooking time will vary depending on the size of the omelet, the altitude, and the size of the pan!. The omelet will continue to cook in the bag once it is removed from the water so remove the bag when the center of the omelet is not quite firm!.
Remove the omelet from the bag and serve!.

FLUFFY OMELET

4 eggs
4 tbsp!. water or milk
2 tbsp!. butter
1/2 tsp!. salt
1/8 tsp!. pepper

Beat yolks, add liquid and seasonings!. Fold in stiffly beaten whites!. Melt butter in heavy pan and add egg mixture!. Cook omelet until it sets, then put in 400 degree oven until it is fluffy!. Place on hot plates and serve at once!.

Here's a little secret that the restaurants won't tell you!. Make your omelet as you like, then put in under the broiler for about 30 seconds or so!. The omelet will puff up and get very fluffy!. In restaurants, they use what's called a "salamander" -- which is nothing more than a broiler!.Www@FoodAQ@Com

Let eggs rest at room temperature for 10 minutes!. Crack the eggs in glass bowl add 1tbsp water for 2-3 egg omelet with a little kosher salt and pepper!. Start in a medium heated pan!.
