Question: Need a casserole recipe!.!.!?
My husband just called and a good friend he works with just lost his mother this am!. I was raised to take food to the immediate family as a gesture of sympathy!. I need help finding a good casserole!. He has 3 children (6, 8 and 10)!. I thought I would take the casserole and some fall decorated/ or halloween cupcakes!. Any help you can give would be great! Just if you want something a little fancier---and it really is good reheated too!.

Shrimp Casserole—

1 ? to 2 lbs of shrimp peeled and deveined

1 stick of butter

1 bunch green onions (chopped)

1 clove of garlic (minced)

1 can rotel tomatos and green chilies

1 10oz can chicken broth

1 cup rice

Melt butter completely in lrg skillet; add onions and garlic and sauté until onions become soft!. Add rotel, chicken broth, and shrimp and continue cooking only until mixture is warm (careful not to cook the shrimp)!. In a 13 X 9 casserole pour raw rice, then pour the shrimp and soup mixture over the rice cover and bake at 350 for 45 mins to one hour (until rice is cooked and all liquid is absorbed)!. Enjoy, it’s even great reheated the next day!.

My favorite casserole dish is my Chicken Rotel!.
Everyone loves it, and it would feed a hungry bunch with no complaints for leftovers!.

1 fryer chicken
1/2 large onion, diced
1/2 large green bellbepper, diced
1 -4 oz!. can sliced mushrooms, undrained and diced
1- can LeSeur peas, partially drained
1- can Rotel tomatoes (Original)
1 lb!. Velveeta cheese
3 cups shredded Mozzarella
1 cup shredded Parmesean
8 oz!. vermicelli noodles
1 stick butter or margarine

(I always season my chicken with salt, pepper, garlic powder and add a bay leaf to the water!.-If you use the bay leaf, don't forget to remove it after you cook the chicken!.)
Boil the chicken until done!. Cool, debone and cut into bite sized pieces!.
Reserve the broth!.

In the chicken stock, boil the noodles as directed, until done!. Drain noodles and put back in the pot!.
While noodles are cooking!.!.!. In a separate sauce pan, sautee the mushrooms, bell pepper, onions and butter until onions are tranlucent!.

Add the sauteed vegetables to the noodles!. Add Velveeta, 1 cup of Mozarella, chicken, and tomatoes!. Stir and mix over medium heat until cheese is melted!. Add the peas!.

Salt and papper to taste!.

Add to a baking dish and top with Parmesean cheese and remaining 2 cups of Mozarella cheese!.
Bake at 350 for about 20 or until browned!.

People don't like casseroles!.

Make baked penne with mozzarella and meat sauce and ricotta/cream cheese mixture!. They will LOVE that!

2 jars spaghetti sauce
1 can tomatoes
1 lb!. hamburger
Italian Seasonings
1 tsp!. sugar

Make spaghetti sauce with above ingredients like you usually would!.

1 box penne

Boil to al dente (undercook)

1 tub ricotta and 1 package cream cheese (softnened)
1 T dried basil
1 tsp!. salt

In another bowl, mix above ingredients together and combine fully

1 bag shredded mozzarella

Mix pasta with all of the sauce and put in a DEEP baking dish!.

1 layer 1/2 of the pasta, all of the ricotta mixture, rest of pasta, lots of shredded mozzarella!.

Cover with tin foil!.
Bake for 35 mins on 350!.

SIMPLE ARROZ CON POLLO

4 boneless skinless chicken breasts
1 lb hot italian sausage
1 lg green pepper, chopped
1 lg red pepper, chopped
1 tbs garlic, minced
1/2 cup chopped onion, chopped
1 pkg yellow rice or saffron rice, family sized
salt & pepper
hot sauce
good grade olive oil

Coat the bottom of a large fry pan or saute pan with olive oil!. Over med high heat, saute garlic and onion in the oil until tender but not browned!.
Cut the chicken breasts into 1!.5" chunks!. Remove the sausage from its casings and crumble into small pieces!. Add the chicken and sausage to the garlic and onion mixture; salt and pepper to taste!. Saute the mixture, stirring frequently!.

When the meats are almost cooked through, add the chopped pepper and continue to saute until done!.

Add the rice and any packaged seasonings to the mixture and stir!. Add water (according to package directions) and hot sauce to taste and stir!.

Cover and simmer until water is absorbed, approx!. 25 minutes or according to package directions!.

Fluff with fork and serve!.

Chorizo can be substituted for the Italian sausage!.

Frozen peas may be used instead of the pepper!. If so, add them when the rice and water is added to the pan!.

Cheesy Chicken & Rice Casserole

Prep: 15 minutes
Bake: 50 minutes
Stand: 10 minutes

Serves: 4



Ingredients:


1 can (10 3/4 ounces) Campbell's? Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
1 cup water
1/3 cup milk
3/4 cup uncooked regular long-grain white rice
1/2 tsp!. onion powder
1/4 tsp!. ground black pepper
1 cup whatever veggies (peas and carrots or corn is good)
4 skinless, boneless chicken breasts halves
1/2 cup shredded Cheddar cheese



Directions:



Heat the oven to 375°F!. Stir the soup, water, rice, onion powder, black pepper and vegetables in a 2-quart shallow baking dish!.

Top with the chicken!. Season the chicken as desired!. ( i sprinkle on a little paprika) Cover the baking dish!.

Bake for 50 minutes or until the chicken is cooked through and the rice is tender!. Top with the cheese!. ( i like to sprinkle with some italian bread crumbs with the cheese) back into the oven till cheese melts!. Let the casserole stand for 10 minutes!. Stir the rice before serving!.

Ingredients

* 2 (10-oz!.) packages frozen chopped broccoli, thawed
* 2 (10-oz!.) packages frozen chopped spinach, thawed and drained
* 2 (10 3/4-oz!.) cans cream of mushroom soup
* 4 large eggs, lightly beaten
* 1 large sweet onion, diced
* 2 cups (8 oz!.) shredded sharp Cheddar cheese
* 1 cup mayonnaise
* 1 teaspoon salt
* 1/2 teaspoon pepper
* 1/2 teaspoon garlic powder
* 36 round buttery crackers, crushed

Preparation

1!. Stir together first 10 ingredients in a large bowl until combined!. Spoon mixture into a lightly greased 13- x 9-inch baking dish!. Sprinkle evenly with crushed crackers!.

2!. Bake at 350° for 40 to 45 minutes or until set!.

i do a chicken casserole by taking canned chicken adding mixed veggies and a can of cream of chicken soup ,mix all of that together and then put in oven at 350 for about 30 mins and the last ten mins of cooking I add crushed potatoe chips for the topping and brown !. it is delish !. 1 large can of Cream of Chicken soup
2 cans of chunck chicken (near the tuna in the store)
mix together and put in a casserole dish
top with Bisquick mixture (1 cup milk, 1 cup Bisquick, 1 egg)

Hearty Ham casserole
2 C fully cooked cubed ham
2 C diced cooked potatoes
1 can (15!.25 oz) whole kernel corn, drained
1/4 C minced fresh parsley

1 TB chopped onion
1/4 C butter

1/3 C flour, all purpose
1 3/4 C milk
dash pepper
1 C (4oz) shredded cheddar cheese or process cheese (such as velveeta)

In a large bowl, combine the first 4 ingredients; set aside!. In a saucepan, saute onion in butter for 2 minutes; stir in flour until blended!. Gradually add milk & pepper!. Bring to a boil; cook & stir for 2 minutes!. Remove from heat ; pour over the ham mixture & stir until combined!. Transer to a greased 11" x7" x2" baking dish!.
Cover & bake at 350 F for 25 minutes!. Uncover & sprinkle with cheese!. Bake 5-10 minutes longer or until the cheese is melted!.


Hearty Ham Casserole
SERVINGS: 6-8
METHOD: Baked
TIME: Prep: 30 min!. Bake: 20 min!.

Ingredients:
4 medium potatoes
3 cups frozen chopped broccoli
1/4 cup finely chopped onion
3 tablespoons butter or margarine, divided
1 tablespoon all-purpose flour
1/8 teaspoon pepper
1 cup milk
1/2 cup shredded cheddar cheese
2 cups cubed fully cooked ham
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/4 cup dry bread crumbs
Directions:
Cook potatoes in boiling salted water until tender; drain!. Peel and cube; set aside!. Cook the broccoli according to package directions, omitting salt; drain and set aside!. In a large skillet, saute onion in 2 tablespoons butter until tender!. Add flour and pepper; stir until smooth!. Gradually add milk; cook and stir until mixture boils and thickens!. Remove from the heat; stir in cheese until melted!. Stir in ham, soup, potatoes and broccoli!. Transfer to a greased 2-1/2-qt!. baking dish!. Melt remaining butter; toss with the bread crumbs!. Sprinkle over top of casserole!. Bake, uncovered, at 350° for 20-30 minutes or until heated through!. Yield: 6-8 servings!.

Country style casserole
2 Cans (10!.75 oz each) condensed cream of chicken soup, undiluted
3/4 C mayo
1/2 C milk
3 TB honey
2 TB dijon mustard
1 package (26oz) frozen shredded hash browns
4 C cubed fully cooked ham OR chicken
3 C sliced frozen carrots, opt!.

In a large bowl, combine the first 5 ingredients!. Stir in hash browns, chicken & carrots if desired!. Transfer to a greased 13" x 9" x 2" baking dish!. Cover & bake at 350 for 45-50 minutes!. Uncover & bake 15-20 additional minutes longer or until bubbly!.

Taco bake
1 pound ground beef
1 onion, chopped
3/4 cup water
1 package (1 1/4 ounces) taco seasoning
1 can (15 ounces) tomato sauce
1 package (8 ounces) shell macaroni, uncooked
1 can (4 ounces) mild chopped green chilies
2 cups mild shredded Cheddar cheese

In large skillet, brown ground beef and onion; drain fat!. Add water, taco seasoning and tomato sauce; mix!. Simmer 20 minutes!. Trasnfer to Crock-Pot!. Stir in macaroni and chopped green chilies!. Cover and cook on Low 6 to 8 hours or on High 3 to 4 hours!. In last 30 minutes of cooking, top with shredded Cheddar cheese!.Www@FoodAQ@Com
