* 2 cups uncooked white rice
* 4 cups water
* 3 tablespoons soy sauce
* 2 tablespoons creamy peanut butter
* 2 teaspoons white wine vinegar
* 1/4 teaspoon cayenne pepper
* 3 tablespoons olive oil
* 4 skinless, boneless chicken breast halves - cut into thin strips
* 3 tablespoons chopped garlic
* 1 1/2 tablespoons chopped fresh ginger root
* 3/4 cup chopped green onions
* 2 1/2 cups broccoli florets
* 1/3 cup unsalted dry-roasted peanuts

DIRECTIONS

1!. Combine the rice and water in a saucepan over medium-high heat!. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender!. In a small bowl, stir together the soy sauce, peanut butter, vinegar, and cayenne pepper!. Set aside!.
2!. Heat oil in a skillet or wok over high heat!. Add chicken, garlic and ginger, and cook, stirring constantly, until chicken is golden on the outside, about 5 minutes!.
3!. Reduce heat to medium, and add green onion, broccoli, peanuts, and the peanut butter mixture!. Cook, stirring frequently, for 5 minutes, or until broccoli is tender, and chicken is cooked through!. Serve over rice!.

This is my favourite Peanut satay recipe ,i usually add sweet chili sauce which has very little heat but a nice taste ,also put less curry powder if you don't want it too hot ,but this is really quite mild!.

This is a really easy recipe and very tasty!. It's written for a microwave, but ingredients can be easily cooked in a saucepan on the stove!. Use light peanut butter for a calorie reduced version and a spray cooking oil rather than the butter!.

1 garlic clove
1 onion
1 teaspoon butter
1 chicken fillet
3 tablespoons peanut butter
2 teaspoons curry powder
1 cup chicken stock
Chop the garlic and onion!.
Place butter, garlic and onion in microwave proof dish and cook on HIGH for 1 minute!.
Add peanut butter, curry powder, ‘something spicy’ and chicken stock and cook on HIGH for 4 minutes; stopping after 2 minutes and stirring!.
Cut chicken into pieces and add to peanut sauce mixture!.
Cook on HIGH a further 2 minutes!.

2 tablespoons reduced fat peanut butter
1 tablespoon fresh lime juice
2 teaspoons soy sauce
1 clove garlic, chopped
1/3 teaspoon curry powder
1 dash ground cayenne pepper
4 skinless, boneless chicken breast halves



DIRECTIONS
Preheat grill for high heat!.
In a bowl, mix the peanut butter, lime juice, soy sauce, garlic, curry powder, and cayenne pepper!.
Lightly oil the grill grate!. Place chicken on grate, and brush with 1/2 the sauce!. Grill 6 to 8 minutes!. Turn chicken, and brush with remaining sauce!. Continue grilling 6 to 8 minutes, until chicken juices run clear!.Www@FoodAQ@Com
