Use the white part!. Throw out the stringy stuff!. The seeds are a great snack when roasted and seasoned!. Just salt is good!.

I don't think you should use either, though i am confused by what you mean by the "white part" The stringy seedy bits should be removed and set aside!. Then the flesh under the hard orange skin (or white skin if you have a white pumpkin) is what you use for cooking!. Cut it up, boil it, roast it, steam it, or whatever you like and then add the cooked pumpkin to the recipe as directed!.
If you are confused about what to do with the pumpkin, just buy a can of ready to go pumpkin!.Www@FoodAQ@Com

scrape out white stuff (seeds!?), scrape out stringy stuff!.!.!. use a metal spoon!. What's left is orange stuff!.!.!.!.peel, roast or boil, mash, then use in recipes!.
