There are different varieties of pumpkin for different uses!. The flesh from your jack o lantern type pumpkin would be watery and weak in flavor for using as a pie filling!. You can use the seeds for roasting but the flesh is best left alone!. Use the proper variety for pies, cheesecakes, etc!. or use the canned!.Www@FoodAQ@Com
I don't believe there is a difference between a pumpkin used for pie, or one used for a Jack O Lantern except in size!. Neither will be very sweet!. Smaller pumpkins are called pie pumpkins because you generally need only 1 cup of pumpkin for a pie!. When you boil up a whole Jack O Lantern, you will have much more than you need!.Www@FoodAQ@Com
jack ol landern pumpkins are cultivated for their sturdy shape and fibrous flesh, to hold their shape after carving!. They are not grown with any qualities good for eatnig, such as flavor, tenderness, etc!.!.!. Instead, use a variety of pumpkin called "Fairytale!." They are smaller, about as big as a large head of cabbage!. They cook down well for pies!.Www@FoodAQ@Com
I agree with rascal, however!.!. if it's freshly cut you can cut into 1 inch cubes and boil it until it becomes soft and mash it like potatoes and use it in your favorite pumpkin pie recipe instead of canned pumpkin!.Www@FoodAQ@Com
NOW wait
did you make the Jack-o-Lantern and is is now growing mold
or just you asking
jack o lantern pumpkins are a poorer quality and lack flavor (!?!?)opinions
BUT cut clean and cook NO candles or extended exposure

If you made a jack-o-lantern, and it's been sitting around (either indoors or outdoors), I'm not sure you would want to use that for a pumpkin pie!. It would be a little gross, no!? Especially if it were outdoors!.Www@FoodAQ@Com
I made pies with real pumpkin squash before!. Only once!. Seriously, the pies using the canned pumpkin taste so much better!. Do not waste your time trying to use a fresh pumpkin for pies!.Www@FoodAQ@Com
